Cream cheese and biltong truffles sound way more interesting to me then chocolate truffles as I am far more a savory kinda of girl than a sweet one.

Cream cheese all on its own with a few salty biscuits is quite sufficient as a light mid-morning snack, but add a few tasty ingredients like biltong and onion and basil and this soft white cheese, becomes a canvas for  delicious bites to follow.  Imagine the possibilities once you have mastered your first attempt at making cheesy truffles…… I’m thinking paprika and little bits of chorizo, bacon and  spring onion, come one, I bet you have a few flavor combinations dying to be made.

Cream cheese is a soft, mild-tasting cheese with a high fat content. Traditionally, it is made from un-skimmed milk enriched with additional cream. So, don’t be fooled, just because it is not sweet, it will not sit around your thighs for the next 20 years or so, oh vey!!

Cream cheese is a must for cheesecakes , even Chicken cheesecakes which proved to be quite a hit on MY Easy Cooking! For my children a wrap will not be complete without dollops of cream cheese.

Today’s  Cream cheese and biltong truffle recipe comes from Anina from Anina’s Recipes. I asked Anina to send her cheeziest recipe for her feature on RSG tomorrow morning as you all know by now, it is 1 day away before we all head off to Sandringham just outside Stellenbosch for the annual Cheese Festival. Anina came to the party with this delicious snack idea and I think it is perfect AND very Proudly South African!

Here is from the lady herself:

My name is Anina, an amateur turned pro recipe developer, baker, caterer and cook with my very own chic regarding food styling and food photography.  Jip – I do those too! I love to cook.  I find myself constantly thinking about food or some other exotic dish to try and if I am not reading cookbooks (like novels I say) I am always in the kitchen scrubbing the dishes (or something) and continuously peeking through my pantry for that one ingredient.

I happily (and sometimes frustratingly) cook for my gorgeous Hubby and little boy, always anxious to fill those rumbling tummies and to please those aching cravings.  Yes, and then there is our friends too, that’s never without compliments!

I have also started with my very own catering project called Aninas Kitchen.  I do catering for small groups at the office or special celebrations by supplying beautifully freshly made Catering Platters.

Aninas Corporate Lunches has also taken off – and now you can order a wide range of freshly prepared hot and cold meals for staff lunches.  A great way to keep your staff happy at the workplace!

Biltong and Cream Cheese Truffles

1 x 230 g tub cream cheese
125 ml powdered biltong – ore if you need more biltong flavor
1 small onion  chopped
1 small handful of fresh basil – chopped
15 ml wholegrain mustard
15 ml mayonaisse
80 g Salticrax or any other savory biscuit – crumbed

First off mix the cream cheese with the powdered biltong in a medium sized mixing bowl.

Add the onion, chopped herbs, mustard, mayo and biscuits and mix until incorporated.

Refrigerate for at least 1 hour.

Use a teaspoon to gather and roll small balls, any size to your liking, dip them in powdered biltong and serve. It should make about a dozen truffle sized balls.

This weekend I will be cooking at the SA Cheese Festival in the DStv theater every day at 2pm. Come cook along or just say hello. Great prizes and recipe ideas to share.

Tomorrow morning just after the 9 o’clock news, I will be  back in my seat at RSG studios, chatting to you about all things cheesy and delicious. I will also in weeks to come take you into the kitchens of other bloggers, chefs and interesting South Africans this year. So buckle up, it is going to be an awesome ride. Tune in 100-104FM or listen online here!
