Strawberry Sandwich Cookies for a good cause!

Strawberry vendors  on every street corner and market, tell me something is happening. Spring is happening! Whether I like it or not  and whether I profess to be a lover of winter warmth and comfort food, some things in life  we have no control over. Seasons come and go and luckily for us winter always makes way for Spring!

Strawberry,  such a vibrant fruit and it really brings a joyfulness to cooking and baking! A simple vanilla cupcake is transformed to deliciousness  with just a little cream and a candied strawberry and I don’t think there is an easier way to serve dessert than to simply stuff strawberries with cheese cake filling and voila…. dessert done and dusted!


Strawberry recipes do not all have to be sweet, this calamari salad  is a treat with the addition of strawberries to it! Strawberries tell me that summer is around the corner and I can make refreshing Strawberry and basil sorbet, yum!

I have been wanting to do a Spring post for days now, but never had the right angle, well today I got the angle! Spring is about new life and new beginnings and when I visited the  Khayelitsha Cookie Company earlier this morning I knew that in this company it is all about creating new beginnings for so many while at the same time bake the most divine cookies! If you read the testimonials  of the happy staff, you will see that this company has heart and that it is not only about the cookies.  The cookies are truly delicious and new flavors are created regularly to meet the public’s demand!


What is more amazing than the cookies  is the Learn to Earn Development Programme which is aimed at developing the skills of people, helping them to sustain a living for them and their families!

Ok, back to some baking or lack there0f, I wanted to make use of the fresh strawberries I had and the idea of a strawberry and cream cheese sandwich cookie came to mind! The rest is history, Khayelitsh Cookies and I were a perfect match, the cookies were superb!

Strawberry and Cream Cheese Sandwich Cookies

makes 10 sandwich cookies


2 packets Strawberry and White Chocolate Khayelitsha Cookies

For the strawberry filling

250 g fresh strawberries – hulled and cut into small pieces

125 ml sugar

pinch of salt


Place the strawberries, sugar and salt in a small pot and bring to the boil. Mash the strawberries further with a fork until you have a slurry consistency. Reduce the heat and simmer the jam for 5 minutes. Allow to cool and use as filling for sandwiches or on buttery toast.


For the cream cheese filling


125 g Lurpak butter ( yes it does make a difference)

250 ml icing or confectioner’s sugar

125 g Philadelphia Cream Cheese


Make sure all the ingredients are at room temperature. Use your electric mixer and beat the butter until soft and creamy, add 125 ml of the icing sugar and beat well. Add the other icing sugar and keep mixing. Now cut the cream cheese in small blocks and beat the cream cheese into the butter mixture one block at a time. When the mixture is done, keep in the fridge for 30 minutes.

To assemble the sandwich cookies

Place 10 cookies on a flat surface and spoon a little strawberry jam on each cookie. Top with a spoonful of the cream cheese filling and lastly top with the ten other biscuits. Serve with a hot cup of tea and a clear conscience, because for every Khayelitsha Cookie you buy you help to support another family.

    Se net asb. weer waar die koekies in die hande gekry kan word, sodat verbruikers hierdie wonderlike onderneming kan ondersteun. Sal dit ook landwyd beskikbaar wees, of slegs in die Kaap?
