Christmas Cookie Decorations-perfect gift for teachers!

Christmas is around the corner…. I kept myself from saying it for a while now, because it just did not feel right to see Christmas decorations in the shops in October already! I can no longer avoid the inevitable!

Christmas is here and so are all the plannings and preparations to make this Christmas the most memorable one of them all! By now your Christmas cake should be in a cake tin somewhere in the pantry, ripening and ready to soak up its monthly baptism of a tot brandy! Your cookie tins should be filled to the brim with cookies for when the family arrives for their annual holiday with you! The freezer should be stocked with cured beef, gammons and turkeys………. get the picture!

Before we get to Christmas though, it is time for all the end-of-year functions, thank you gifts and class parties if you still have children in the house! I do and every year, around this time, I find myself going up and down the isles in the shops to look for suitable gifts for all the teachers.


Earlier this week, I had the privilege to do a photo shoot for Safari at the home of Tihmily Cakes (This Is How Much I Love You). I just love it when I see such dedication, drive and talent to match! This young couple Roenel and Renier started this small business from home and from what I can see, they have no intention on staying small! Roenel is the qualified pastry chef and Renier looks after the management and admin side of the business. They work so closely together that I would not be surprised to find out that under pressure Renier is also put to work in the pastry kitchen!


Roenel had the most beautiful cookies and pastries on display, her cake pops are so, so beautiful and the Chocolate milk tart was simply out of this world! It was there that I got the idea for my end-of-year-teachers-gifts! Why not make edible Christmas Cookie decorations for the Christmas tree? They are beautiful, unique and hand-made which is so much more special than just buying a random gift that the teacher might not even like! I was a teacher for many, many years and would have loved a gift like this!


Christmas Cookie Decorations


750 ml flour

375 ml  sugar

2 eggs

170 g butter, room temperature

7.5 ml baking powder

5 ml vanilla extract

50 g Safari Currants

Cream the butter and sugar until creamy and light in color.
Beat eggs in a bowl and add to the butter mixture.
Add the remaining ingredients and mix well . ( It should form a stiff dough )
Place the dough in a bag and allow to rest in the fridge for about 30 minutes.
Preheat oven to 160 C.
Add a little flour to your work surface and roll out the dough with a rolling pin  to about 5 mm.
Use Christmas themed cookie cutters and cut out the biscuits. place on a baking sheet that you have lined with baking paper.
Bake the cookies or 10min. If it still is not lightly brown on top then you bake it for another 5 min .
Remove from the oven and leave the cookies to cool.

For the icing


2 eggs – separated

3 cups icing sugar – sifted

food coloring

Separate two eggs and keep the yolks for later to use in custards or omelets. Add the icing sugar to the egg whites and whisk until it is completely lump free. Divide the icing into three bowls and add the coloring that you want.
Add the egg white in a bowl and 3 cups icing sugar and whisk together . Divide the icing into 4 bowls . You can then use any 4 colors color as you see fit . Use a knitting needle or kebab stick to make little holes at the top of each cookie to put a ribbon through for hanging. Go crazy and make these cookies uniquely yours!

    Ek beplan n dankseggings kerslig ete.Baie eenvoudig bv;goingsak en blikbekers en strooiballe hier en daar om stal gevoel te gee en wil graag iets vir gaste gee om die aand te onthou.Hierdie kers versierde koekies lyk so old time en sal dit beslis wil maak want dis nounet wat my aand sal komplimenteer om te hang aan boom en gaste kan een afhaal.Dankie Roenel
