Creamy Chicken and Mushroom one-pan wonder!

Creamy Chicken for supper and only one pan to wash, seems to be the kind of meal we should often have! I have had a week from hell and looking back not sure just how I survived it, but I am happy to report the family only had pies one night this week! Yes, it was homemade, just not made in my home!
Creamy chicken on a bed of buttery noodles, need I say more! In our case we use chunks of warm ciabatta to mop up all the juices from the creamy chicken! No time to wash the noodle pot! Anyone can make a creamy chicken casserole, some even use a packet to make chicken a la king or a deliciously creamy masala chicken! The trick is to use as little as possible to get the most flavor out of the dish! Meraai se Paai ( most probably the recipe most searched for here on My Easy Cooking) is made with a creamy chicken filling and a buttery puff pastry crust! Out of the world!
I had a very busy week, to top that MIL is visiting and the children are having all sorts of events, last minute tutor lessons and things going on! For this old teacher, their afternoons are way too busy, in my ideal world, they should all sit and study every afternoon! Some days, I am not sure how I managed to stay sane, but I did, which proves that a woman is like a teabag…… throw her in hot water and she just becomes stronger!
The creamy chicken dish was made out of desperation, I had cream, chicken and mushrooms……. quite a lot if you consider that some people only have dry bread to eat, but to try and create something worth posting, is tricky with such limited ingredients!
Creamy Chicken One-pan wonder
serves 4
Ingredients
4 boneless chicken breasts – I prefer to keep the skin on
3 sprigs thyme
2 cloves garlic
30 ml Olyfberg olive oil
salt/pepper
250 g mushrooms of your choice – washed and cut the bigger ones in quarters
250 ml cream
Method
Season the chicken pieces with salt and pepper. Heat the olive oil in a pan and add the thyme and garlic as well as the chicken pieces! Keep the heat low and slowly brown the chicken on all sides! Take your time with this, making sure that there is a lot of caramelization happening on the bottom of the pan! When the chicken is done, add the mushrooms and saute in the pan juices for about 2-3 minutes. Lastly add the cream and allow the cream to reduce to about 2/3 of the original amount. Taste and adjust the seasoning one last time if it is necessary. Bring the pan to the table and serve with chunks of warm ciabatta!
I will definitely prepare this during this Christmas season just that I seem to be the only one that loves mushroom in my family.
