Christmas flavors and colors in one delicious salad!

Christmas Flavors

Christmas flavors  to me  is fruity, spicy, creamy and of course always salty.

Christmas flavors  in layman’s terms, (that’s me)  then boil down to gammon, lamb, chicken, bowls upon bowls of  salad, mom’s favorite mustard, potatoes, pork with crackling, rice  and gravy…… oh my word, I get tired just thinking of  the discomfort afterwards! Then we still have to scoff down the trifle, the penny pudding and brandy sauce, ice cream and fruit salad! I don’t know about you, but in my family Christmas is a BIG deal! A lot of planning, cooking, discussing and buying precedes the biggest family get-together of the year!

A Christmas would not be a proper Christmas if it did not have all the traditional Christmas flavors. So which flavors to part with….  the  pork with crackling? No way Jose! The gammon with mom’s mustard? Not over my dead body! Each one in our big family has his or her own favorite, what do do? What is more worrying is that as our family grows, new son-in-laws and daughter-in-laws come with even more new recipes and trying not to offend an in-law, we happily just add another table to make room for all the new dishes!


I woke up this morning ( yes, I do wake up most mornings with a recipe in my head) thinking, what if I try and  put as many of the Christmas flavors in one salad? Would my family approve? Would they even get that I am trying to do them all a favor by reducing dirty dishes, calories, holiday remorse etc? Most probably not, but man, was my own little family impressed with the salad! Hubby was speechless and that does not often happen with a salad in front of him!

I would imagine that my bigger family will all have a good old chuckle reading this, but I bet they will all try this salad with all the Christmas Flavors the next day, using the leftovers… and you know what, that is also ok? Why spoil a good thing and our big family get-together is a good thing!

Before I get to the recipe, I just want to say, that I bought most of the ingredients, even better if a laid back Christmas lunch is your kind of thing!

Christmas flavors

Christmas Salad

serves 4


80 g Woolworths baby butter lettuce

2 mini savoy cabbages

1 smoked pork fillet

1 small packet Woolworths croutons

1 x 200 g good quality liver paté

200 ml cranberries

100 g Fairview Chevin

200 ml pecan nuts

4 baby courgettes

100 ml pomegranate pips

Mom’s Mustard

Christmas flavors


Heat a pan on the stove and pan-fry the pork fillet for 10 – 12 minutes or until it is cooked through. Cool the fillet. Use the paté and spread a little on each crouton. Now you are ready to assemble the salads. Use four of your prettiest plates and divide the butter lettuce amongst the plates. Break the smaller inner leaves of the savoy cabbages and add to the the plates. Use a vegetable peeler and “peel” the courgettes into thin ribbons. Divide the pork fillet amongst the plates and also the other ingredients. Place the croutons with the paté in the salads. Scatter the pomegranate pips over the salad and drizzle some of the mustard on the salad. Lastly crumble the Fairview Chevin over the top and voila, all the Christmas Flavors in a Salad.

* If the mustard is too thick, add a little milk or cream to thin it down!
