Festive fruit Roll – Let the countdown begin!

Festive, festivities, feasting, all words that you will hear many times in the next ten days or so! Yes, indeed the 10 day countdown to Christmas is finally here! Hard to believe, but another year has come and gone!

Festive times are good times and it is the time of year where we can indulge a little, over-eat a little and feast …. just a little! I am about to share a recipe for a light swiss roll with you and when I looked back in time, I saw I also had a meringue roll last year around this time…… it’s just how I roll! (sorry, just could not resist that one! ) Last year I made a festive Roulade with berries, the previous year  some festive fruit lollies to combat the heat and if your ran out of ideas for snacks over the festive season, here are some ideas!


You all know that Swiss roll right? Around here, people refer to it as the jamroll and whenever I organize a tea for church or school, someone will always bring a jam roll! Impossible to cut in smaller pieces and even more impossible to serve in super-size rings at these functions. My other problems with these bought Swiss rolls are that they lack flavor. They are sweet yes, but it is a bland, sickening sweetness! Blegh! So to put it mildly, I have issues with jam rolls! At the same time, I have always wanted to bake them, but felt a tad intimidated!

Then my sister won a cooking class with our beloved Jenny and she came back beaming with pride as they made Swiss Rolls, chocolate Swiss rolls! She was so convincing that making Swiss Rolls are easy, that I decided to make it straight away! Although they made the chocolate version, here is my adapted festive fruit roll for Christmas this year!


PS – Did you know that the Swiss Roll did not originate in Switzerland as the name indicates? It originated in Central Europe and was also known as the jelly roll back then, but you can read all about it here!

Festive Fruit Roll (adapted from a Jenny Morris recipe)

serves 6-8


4 jumbo eggs

100 ml caster sugar

210 ml flour

a pinch of salt

For the Filling

250 ml cream 30 – 40 ml caster sugar

5 ml vanilla extract

1 x 110 g granadilla pulp

icing sugar


about 200 g fresh peaches or berries of your choice



Preheat oven to 180 C. Line a 30 x 30 cm baking sheet or oven pan with silicon paper and I take no chances and even spray the paper with Spray n Cook! Place the eggs and sugar in your mixer and beat until light and fluffy and more than double in volume. The more air you can get into the cake, the lighter it will be! This is called the ribbon stage. Mix the salt and flour together. Remove the bowl from the mixer and gently fold the flour into the egg mixture with a metal spoon. Pour the mixture into the pan and bake for 11 minutes. I used my small Solar Dome and baked on 170 C and baked for 10 minutes. W

Here is where the fun starts. While the cake is baking place a damp drying cloth on a flat work surface. Place a layer or wax paper over the cloth and sprinkle some sugar or castor sugar on the paper. When the cake is done baking, remove from the oven and turn upside down onto the sugar. The silicon paper is now facing you! Gently remove the silicon paper and place another layer of wax paper over the cake. Gently roll up the cake, using the cloth and paper to help you. NB: Do not roll the paper and cloth up with the cake, just used it is help. Allow the cake to cool completely.

Whip the cream, vanilla extract and caster sugar to stiff peaks. Unroll the cake and spread 3/4 of the cream on the cake. Drizzle some f the granadilla pulp on the cream and roll up the cake. Place on a rectangular serving platter. Scoop the rest of the cream on the cake roll and decorate with fruit and  mint. Lastly drizzle some of the remaining granadilla pulp on the fruit, dust with icing sugar and serve immediately!
