Mango and Coconut Tropical delight

Mango and coconut reminds me of sunny beaches, Coppertone Suntan lotion and carefree holidays! Eating this easy dessert, the mango and coconut takes you away to those sunny beaches and carefree times with every mouthful!

Mango, most certainly my favorite of all the tropical fruits and it is evident when you see how many mango recipes I have featured here on My Easy Cooking. My Chicken burgers with mango Salsa is still one of our favorite meals to enjoy when mangoes are at their peak! My family can never pile enough of this easy Mango and Corn Salsa on their plate when I make it, so do give it a try!


Today I am combining mango and coconut in the easiest dessert you will ever make! It is like kitchen chemistry, it happens when you are not looking!  With Christmas but a few days away and moms are frantically trying to bake more, cook more and buy more, this dessert will solve all of that frantic running around! Not only is it easy to make, but it can be made in advance, kept in the fridge for a day or so and most imporantly, it makes for a show stopper end to your Christmas meal.

We have covered the starter with our easy Campfire Devilled Chicken Livers, we made our main meal with our Gammon and roasted fruit cooked in the Weber and today we finish of with this delightful dessert!


Mango and Coconut Tropical Delight

serves 6 ( but recipes can easily be doubled)


500 ml cream

125 ml caster sugar

juice of 1 lemon

For the topping

1 fresh mango

fresh coconut shavings

fresh berries of your choice


Pour the cream and caster sugar into a small pot, put on the stove and slowly bring to the boil, allowing the sugar to melt. Boil the cream for exactly 3 minutes, remove from the heat and cool for 5 – 10 minutes. Squeeze the juice of 1 lemon in the cream and stir. Pour into 6 small ramekins or glasses and cool in the fridge. The cream sets into the most delightful consistency you can imagine. Top with fresh mango and coconut and serve with small spoons.

    Heerlik! Ek het vanoggend geluister, en het dadelik op die blad kom snuffel. Ek gaan hom beslis probeer.
    Ek sien caster sugar kort by jou 125ml.

    When I listen to the recipe I knew instantly that I MUST HAVE. My daughter in Perth Australia cannot walk past a lemon merinque tart or anything with a similar taste….

    Ekt jou “Mango and Coconut Tropical delight” gemaak vir Kersfees – dit is die
    lekkerste poeding! Ek’t dit in klein flessies bedien en het my klapper eers bietjie gerooster. Ek het bloubessies gebruik as versiering. Ons wou sommer die flessies uitlek so lekker was dit !!
