Chinese Beef – Oh my gosh, it is like my new best recipe. Yes, I did say I was on a bit of an Oriental wave at the moment, but this IS good!

Chinese Beef Shortribs have been on our table quite a few times since I made it the first time two weeks ago. My family was in awe and all that was heard around the table that night were sighs, licks, lip smacks and grunts of delight. I think if I had made double the quantity, they would have polished it! What I love about all these Oriental recipes is that you get maximum return on very little effort and the food is relatively cheap too.  Beef shortrib is one of the cheaper cuts,  it requires longer cooking than for instance steak, but I made a plan for that.

The recipe for the Chinese Beef came about like this. My daughter has just started high school so with cultural and sport practices, we all have to find our new routine, but what further complicates it, is that big brother has a different routine, so I find myself driving up and down dropping and fetching children. Sometimes we arrive home at 6 and then the family looks at me with hungry eyes that say: “So what’s for supper mom, you were at home all day?”  If only that was true………

So two weeks ago, I had planned my afternoon so that I could cook a proper supper and just after I had seasoned the beef, the kids phoned for me to fetch them. I quickly wrapped the beef in foil and popped it in the oven and prayed for my plan to work. Luckily I did that, because as they jumped in the car, the one needed a costume and the other needed more stationery…… so a trip to the shop had to be done too. When we arrived home much later, I opened the Chinese beef and oh my word, the flavor that came from that foil parcel was so intoxicating, I wanted to start eating straight away. The meat was fork tender and I could quickly finish it off in 10 minutes flat.

So now, I have learned to be a little more organized by..

– chopping vegetables in the morning

– cook rice in the morning. 250 ml rice, 750 ml water, a little salt. Bring to the boil and boil for 10 minutes. Turn the heat off and place the lid on the pot. Tonight you just loosen the rice with a fork and re-heat.

– pre-cook meat if you can ( I would not do this with chicken)

– set the table

serves 4


1 kg beef shortribs

4 cloves garlic

80 ml soy sauce

10 cm piece fresh ginger

5 ml five spice

1 star anise – optional

For the stir fry

30 ml vegetable oil

10 cm fresh ginger – cut in fine strips

4 carrots – cut in julienne strips

500 ml fresh broccoli florets

125 ml frozen peas

1 pineapple- peeled, core removed and cut into chunks

2 large spring onions – cut in pieces

10 ml sesame oil

30 ml soy sauce

30 ml honey

5 ml fish sauce

juice of 1 lime

To serve

fresh coriander

toasted sesame seeds

chopped chili – optional

Pre-heat oven to 170 C. Place the strips of beef, ginger, garlic, star anise (if using) and five spice  in a double layered foil pouch. Add the soy sauce and close the pouch. Place the pouch in a roasting pan and put in the oven for 90- 120 minutes. While this is happening you can fetch kids, have coffee with a friend or put your feet up! When the beef is cooked, remove from the foil and cut in big chunks. Now heat the oil in a big pan of wok and add the ginger. Add the beef and stir-fry until it browns, add the liquid from the pouch. Add the broccoli and carrots and keep frying until the vegetables are cooked, but not mushy. Add the honey, soy sauce, fish sauce, sesame oil and spring onions and pineapple chunks. Stir fry for another 3-5 minutes and taste. Lastly adjust seasoning and add lime juice just before serving. Serve with steamed Jasmin rice, fresh coriander, chili and sesame seeds.
