Coconut Chicken Wraps with Basil Mayo!

Coconut reminds me of carefree summers around the municipal pool in Ceres, tanning with Tropicana Suntan Lotion and eating Coco Pops ice lollies! Coconut also reminds me of Christmases gone by with grandma and her cake tins filled with Hertzoggies.

Coconut Ice is another of my guilty pleasures and at our local Spar the the small packets of coconut ice is just to close to my hands and too often a packet just slips into my basket! I have never thought of coconut in the same phrase as chicken though! Coconut milk, yes, because what would this Chicken broth be without it, but I am talking desiccated coconut. The stuff you use in cookies, and cakes and tarts, never in savory chicken dishes. That was until we started “banting” and using flour or breadcrumbs became absolute no-no’s!

With the extreme heatwaves we’ve experienced these last few weeks, I have not had any desire to cook. We basically live on salads, quick stir fry dishes or we braai. For some reason yesterday morning I had the craving for something tropical, not sweet, but tropical. The idea of crumbing chicken with coconut is not new, but it is new to me! So I decided on Coconut-crumbed chicken Wraps with a light basil mayonnaise to drizzle over it. The family went mad for it, I could have made double the quantity and they would have polished it. So problem solved. Coconut-crumbed fish and prawns are next to try, but for now, I think another batch of coconut chicken wraps will work just fine! It will make my children so happy to find these chicken strips in their lunchboxes!

Coconut Chicken Wraps with Basil Mayo

serves 4

Ingredients

4 chicken breast fillets

salt and pepper

500 ml desiccated coconut

50 ml almond flour

5 ml Thai spice – or any other spice you have

2 eggs

30 ml olive oil

Method

Cut the chicken into thin strips. Season with salt and pepper. Mix the coconut, almond flour and spice  in a plastic bag. Beat the eggs lightly in a bowl, add the oil and then add the chicken strips. Mix with your hands until all the chicken pieces are coated with the egg mixture. Now transfer the chicken to the bag with the coconut/almond mixture, close the bag and give it a shake to coat each chicken strip with the crumbs. Line a baking sheet with grease-proof paper  and place the chicken strips on the baking sheet. Refrigerate for at least 30 minutes. Preheat the oven to 170 C and bake the chicken strips  for 15 – 20 minutes.

For the basil Mayo

Ingredients

1 egg

5 ml white wine vinegar

5 ml water

10 ml Dijon mustard

250 ml olive oil – you can use half coconut oil and half  olive oil

125 ml basil

zest and juice of 1 lemon

salt and pepper.

Method

Place the egg in a long glass or jug that your stick blender can fit into. Add the vinegar and water and lastly the oil. Place the blade end of your blender over the egg and start the machine. Very slowly pull the stick blender up and you will see the mayonnaise happening right there in the jug. Once the mayonaisse is done, add the basil, lemon juice, zest, salt and pepper, give it one more blitz and voila – Basil Mayo!

To serve

Use buttercup lettuce for wraps and simple put two strips of coconut chicken in each wrap and top with the basil mayo. Add chopped chili if you need a little extra kick!

    Thank you for this recipe! This is exactly what we are having tonight! I have chicken fillets and coconut just need almond flour. I know it will be a hit as crumbed chicken is something my family could live on given the option!

    Love this and the fact that they’re baked instead of fried. Might just have to make a few extra to keep on hand as snacks for myself or toddler.
