Apple Crumble Cake

Apple Crumble with its golden crown of crumbly glory and a big spoon of semi-soft vanilla ice-cream, is hard to beat.

Apple crumble must be one of the most popular desserts or cakes in the world. It is such a simple dish, made with simple ingredients such as apples, flour, oats, butter and sugar! I think it is the explosion of textures that hits your mouth and causes the euphoric sensation! The soft mushy apples, slightly tart, then the  creamy doughy part and lastly the crunchy, caramel crumbs on top! Heaven in every single bite.

For World Baking Day, I wanted to make something heartwarming to drop off with someone special. It was then I got the idea of an Apple Crumble Cake. Something warm and comforting ,but why not add another texture to the mix….. soft vanilla sponge to drink up all the cream  you will drizzle over it!

World Baking day was yesterday, the 18 May, and the Pledge to Bake initiative is a great idea,but with a whole day of shooting on Saturday, I was not going to have another day in the kitchen. I also think we should do good deeds every day, not only on specific days, so I baked my cake today!

May I just say, it is always better to give than to receive, but with this Apple Crumble cake, it took guts to give it away. Luckily we are all banting so, it helped with the decision making! I received a lovely bag filled with goodies from Woolworths  as part of their #Flavoursociety launch and what better way to say thank you than to bake and share with someone special!

Apple Crumble Cake

makes 1 big ( 25cm) cake or 6 small cakes


For the cake layer

250 ml self-raising flour

250 ml sugar

250 ml soft butter

3 eggs

5 ml fine cinnamon

5ml salt


Pre-heat oven to 180C. Spray a 25cm pan with Spray ‘n Cook. Place all the ingredients in a mixer and beat until light and creamy. Spoon the mixture into the pan.

For the topping

1 x 410g canned pie apples

1 Woolworths Crumble Mix

100 g butter

5 ml cinnamon


Place the pie apples on top of the cake batter.

Make the crumble according to packet instructions and crumble over the top of the apples. Bake for 35 – 40 minutes and serve with cream or ice-cream.
