Pizza Cups – Your kids will love them!

Pizza Cups are not my invention! The wonderful world of Google and Pinterest are choc-a-bloc full with ideas on how to makes these delicious treats.
Pizza Cups saved a heap of teenagers from utter boredom this week! I have teenagers in my house and that says a lot!
Teenager means:
– lots of noise
– abundant laughter ( at the silliest jokes)
– loads of fun
– alarmingly amounts of movement, bumping, tripping and hopping on music
– eating, snacking, munching and devouring copious amounts of food!
…..but, I love having the buzz in my house, I love feeding them, listening to them and all the happy faces, makes me a very happy mom! My children’s friends obviously know by now that if they come for a visit, they will cook or make their own food, my own children of course were horrified at first until they found out that it is “pretty cool”! So these days, I am a pretty cool mom!
The idea with the pizza cups are that you have everything ready, shop-bought meatballs, shop-bought pizza sauce, pastry and cheese. I made my own meatballs, simply because I refuse to pay R60+ for a few meatballs. You are welcome to make your own meatballs with this simple recipe!!
Pizza Cups
serves 6 teenagers ( for about 1 hour – after that they will something else 😉
Ingredients
2 x 400g puff pastry
1 Jar Ina Paarman Roasted Vegetable or Bolognaise sauce
18 meatballs
500 g grated mozzarella cheese
Freshly chopped herbs such as parsley or basil
Method
Pre-heat oven to 200C. Spray a muffin pan with Spray and Cook. Roll out the puff pastry and let the children press out dough circles about 9 cm in diameter. Place the dough circles in the bottom of the muffin pan and top with a little sauce. Place the meatball on the sauce, top with a little extra sauce and lastly sprinkle some grated cheese on top. bake for about 20 minutes and serve with chopped herbs.
Now get them to wash their own dishes…. it is a totally different ball game!
I am not a teenager, but it looks easy and delicious, I am definitely going to give this a try!
