Portobello Mushrooms

Portobello Mushrooms are the big daddy of mushrooms!

Portobello mushrooms are just  grown-up button mushrooms, yip, I did not know that! These meaty beauties have a scientific name, Agaricus bisporus and when they are yound and almost all white, we know them as button mushrooms, but when they are all big and grown up, we buy them as Portobello Mushrooms!

I find it very difficult to walk pass these beauties when I see them in the shops. I have made a stuffed version of these mushrooms and I have made the most divine buttery Mushroom tarts using Portobello Mushrooms, but yesterday I wanted to kind of recreated the flavors of Eggs Benedict or Eggs Florentine, with just a little difference in the method. I did not feel like making a Hollandaise sauce nor did I feel like poaching some eggs, so I found  shortcut!

Portobello Mushrooms

Portobello Mushrooms stuffed with Spinach and Ham

serves 4


4 big Portobello Mushrooms

1 large onion – finely chopped

15 ml olive oil

2 – 3 cups raw shredded spinach or 4 slices of smoked ham

250g grated cheddar cheese

80 g grated blue cheese (optional)

1 egg

3ml grated nutmeg or cayenne pepper

salt and pepper

30 ml Fairview Full Fat Yogurt


For the spinach version, heat a pan on the stove and saute the onion until soft. Add the spinach and saute until the spinach has wilted! Mix the spinach witht he cheeses, egg, salt,pepper and cream cheese of yogurt. Spoon onto the mushrooms and bake until golden brown and bubbly!

For the ham version, mix the cheeses, salt, cayenne pepper and egg in a bowl. Place a piece of ham on each mushroom and top with the egg/cheese mixture. Bake in the pre-heated oven until golden brown and bubble! Serve with a crisp green salad!

    O my gedorie… my mond kwyl nou behoorlik!

    And even I can make this (I think).When you place the ham in the mushroom, do you shred it slightly so that the topping can “seep through”?
