Crunchy Ricotta and Honey fritters

Crunchy – I just love the word, don’t you!

Crunchy says it all, it makes a noise when you bite it, it has texture when you eat it and it was most probably baked or fried, which is all good man! Think of crunchy falafels, pork crackling, cookies, Cheese and bacon snacks…. the list goes on and on! What is your favorite “crunch” moment! Is it a sweet indulgence or a savory one?

Last week I caused quite a storm with my easy home made Ricotta and people were just amazed at how easy it is to make your own cheese! Well, in my house, we still make a new batch almost every second day and as I am typing I have a gorgeous Spinach and ricotta pie in the oven.


I have a thing about fritters at the moment and just love the bite-size idea! The debate will forever go on and one whether a fritter is in actual fact crunchy or not, I really don’t care. We make them soft and pillow-like or crunchy and delectable!

Crunchy and delectable these ricotta and honey fritters where indeed! Super easy to make and they deliver all wow-factor like you cannot believe!


Crunchy Ricotta and Honey fritters

makes 24


500g ricotta

5ml cinnamon

30-40 ml honey

45 ml flour

5 ml baking powder

2 ml salt

3 eggs

600 ml breadcrumbs

1 l oil for frying


Place all the ingredients, except the breadcrumbs in a mixing bowl and mix well. Shape into little round fritters. Place the breadcrumbs in a plate and roll the fritters in the breadcrumbs. Place on a baking sheet and refrigerate for about 30 minutes. Heat the oil and fry the fritters until golden brown and ……. CRUNCHY! Serve with more runny honey!
