Nachos Chicken

Nachos Chicken, it has to be delicious right? That’s what I thought!


Nachos chicken – I am not sure if it was my invention of not, I certainly would like to think so! There are many recipes for Chicken Nachos, but not many for Nachos Chicken! The idea is that you coat the chicken with Nacho-flavored crumbs and enjoy it with the dips and salsas you would normally enjoy with Nachos!

 

Nachos Chicken

Nachos Chicken with salsas

Serves: 2-4

Ingredients

500 g chicken fillets
125 ml milk
½ cup/125 ml flour
½ cup /125 ml cornflour
1 t / 5 ml smoked paprika
½ t / 3 ml cumin
1 t / 5 ml chipotle spice – some shops call it Taco Spice
3 T/45 ml vegetable oil
1 t / 5 ml salt

To serve:

a variety of salsas (see recipes below)
250 ml (1 cup) sour cream
250 ml (1 cup) grated cheese
fresh coriander

Method

1.Preheat the oven to 180 C. Line baking sheet with baking paper or spray with non-stick spray.
2.Pour the milk into a small bowl and all the dry ingredients into another bowl.
3.Dip the chicken fillets first in the milk and then in the coating mixture and place on a baking sheet.
4.Drizzle with oil and bake for 15 minutes, or until the chicken is golden brown and crisp.
5.Serve on a platter with sour cream, grated cheese and fresh coriander, with the salsas on the side.

For the salsas:

GUACAMOLE

1 avocado
1 green chilli, finely chopped
the juice of half a lime or lemon
salt and pepper

Scoop the flesh of the avocado into a bowl. Add all the other ingredients and mix well.

TOMATO SALSA

250ml (1 cup) chopped tomato
30ml (2 Tbsp) chopped fresh coriander
1 small onion, peeled and finely chopped
the juice of half a lime or lemon
5ml (1 tsp) sugar

Mix all the ingredients together in a pretty bowl.

SWEET CHILLI DIP

75ml (5 Tbsp) mayonnaise
chili sauce to taste
1 small red chilli, finely chopped

Mix all the ingredients for the dip in a small bowl.
