Onions are an essential part fo the Holy Trinity of cooking. Together with bell peppers,and celery in equal quantities mirepoix and forms the base of many recipes in many cuisines.

Onions bring flavor to so many dishes, yet they are always on the back ground as part of the flavor base, the jus or the stuffing. Very seldom you will find onions the stars of the show! As a child I loved the cartoon Senõr Onion – yes, I know it is so long ago, I could not even find a clip of image to show you what Senõr Onion looked like. I love onions and with a little care and effort, this humble vegetable can easily rise to stardom! Have you ever tried to smoke onions – no, not rolled up like a cigarette, smoked as in bacon to add the delicious smokey flavor to the onions. It is as easy as pie to do it and you can try this delicious Smokey Onion and Olive Beer Bread! Onions, cut in rings, dipped in a light beer batter and fried to perfection, there is nothing quite like it!

I saw these beautiful red onions and wanted to elevate them to a better place, a place where they were the super-stars! I did not want to add any ingredient or flavor that would steal the show from them. Did I succeed? Oh yes, I did! These stuffed onions were delicious, yes even the boy (man) child loved them!


Onions – stuffed with cheese and nutty goodness

makes 6


6 red or white onions

200 ml white wine

a sprig of thyme

1 bay leaf

30 ml butter

6 strips streaky bacon – optional

1 clove garlic – crushed

2 x 100g Fairview Chevin

salt and pepper

100 ml finely grated parmesan

200 ml chopped pecan nuts – pine nuts will also be delcious ) finely chopped0

chopped parsley


Pre-heat oven to 180 C. Remove the outer skin of the onions. Now use a sharp knife and cut the “lids” off. Also cut off a little piece at the bottom of the onion, without remove the entire roots part. It is just to make a flat bottom for the onion to stand up straight. Place the onions in a oven-proof dish, add the wine, thyme and bay leaf and cover with foil. Place in the oven and bake for 10-15 minutes so that onion is soft, but not falling apart. Remove oven dish from the oven. As soon as you can handle the onions, remove the inner part of the onion, leaving about 2 layers in tact. Chop up the inner parts of the onion! Heat the butter in  a pan and saute the bacon(if using), onions and garlic. season with salt and pepper and allow to cool. Mix the onion and bacon mixture with the chevin, parmesan and  100 ml of the pecans and spoon into the hollow onions. Scatter the remaining nuts over the top and bake until golden brown. Serve with fresh thyme or parsley!

      Barbara, chevin is a goats cheese, but you can use feta also!
