Chicken Mayonnaise Pies

Chicken Mayonnaise is by far my favorite toasted sandwich filling! Make sure you put enough mayonnaise on mine, thank you!
Chicken mayonnaise is also delicious in wraps, pitas, as a salad or on little super white sandwiches, the kind you eat at funerals!
I have had all of the above, but I have never had a chicken mayonnaise pies, although I have seen it advertised often. Well, this is about to change, because tomorrow, my good friend Freddie Kritzinger from Le Stoof, will be my guest in the RSG studio and he promised to bring samples of his Chicken Mayonnaise Pies.
Freddie came into my life a few years ago when I cooked at the Cheese Festival. He was the “miracle worker” behind the scenes chef who made me look uber-profesional and organized. Freddie is my daily inspiration online. If you visit his Facebook page which he uses to advertise his various businesses, you will very seldom see a negative word or opinion anywhere. His without a doubt the most positive, inspirational and giving soul I know. Freddy not only works as a flight attendant on local flights, he also is a professionally trained hair gents stylist and if this is not tiring enough he recently started a pop-up eatery in his own home! What makes this a mammoth achievement in my eyes, is that he does his dinners in a 3 x 3 m kitchen with a little counter top stove…..yes, he even baked his Chicken Mayonnaise Pies in that little oven. Thank you Freddie to show me daily what is possible with planning, a positive spirit and lots of hard work!

Chicken Mayonnaise Pies
Makes 6
Ingredients
1 roll puff pastry
1 cooked rotisserie chicken – deboned and meat chopped
250 g smooth cottage cheese
75 ml good quality mayonnaise
fresh parsley – chopped
salt and coarse black pepper – if needed
Method
Preheat oven to 200C. Line a baking sheet with parchment paper and spray well with a nonstick spray. Roll out the puff pastry and with a sharp knife, cut the dough in half lengthwise so you have two long strips. Take one end of the dough and fold over to form a triangle, like a samoosa. Cut the the triangle and fold again to form another and until you have 6 triangles. Place the dough triangles on the prepared baking sheet and bake until puffed out and golden brown in color. Remove from oven and carefully cut open 2 sides of each triangle and open the “pie”. Allow to cool.
Place chopped chicken in a bowl, add parsley, mayonnaise and cottage cheese and mix properly. Season with salt and pepper. Spoon into the pastry “pies”.
Serve with a salad or pack in a lunch box.
