Homemade energy bars that will not cost you a fortune and taste way better than any of the store-bought ones on the shelves!

Homemade energy bars so good that you may want to make a double batch. Gone are the days that a lunchbox can have two slices of bread with peanut butter and jam! My kids have such long days at school and packing lunchboxes has become somewhat of a science in my home. “Peanut butter makes my breath smell”, says Teen #1! “Mom, I cannot eat so many carbs”, says Teen #2! Packing biltong, sausages, cheese, nuts and fruit can be quite a pricey exercise!

Anyone else have a boy teenager in the house? Oh my word, they never, ever stop eating! The standard greeting when I fetch Teen#1 from school is: “Mom, I am so hungry”! Only to repeat that phrase at least 10x during the course of the afternoon! Supper follows and immediately after that “Do you have something sweet, mom?”

These homemade energy bars, helps a lot to fill the bottomless pit! They are filling, scrumptious and very easy to make in case the cookie jar hits rock bottom!

makes 18 bars
125 ml butter

125 ml brown

80 ml golden syrup or honey

375 ml rolled oats

125 ml dried cranberries

125 ml coconut flakes

125 ml chopped Safari walnuts

125 ml Safari raisins

Homemade energy bars

Pre-heat the oven to 180 degrees. Line a baking sheet of 25 x 40 cm with greaseproof paper. Melt the butter, sugar and syrup together in a glass bowl in the microwave. Mix all the dry ingredients and add to the melted butter and syrup mixture. Mix thoroughly. Spread the mixture evenly into the baking sheet and bake for 10 – 15 minutes. Allow to cool for about 10 minutes and then cut it into bars. If you wait to long and let it cool completely, it will be difficult to cut.  Keep in an airtight container.

    Hallo Nina, het jy dalk ‘n low GI resep vir muesli? Ek koop gewoonlik “Heartland” maak maar wil graag my eie maak.
