Squash with Cheese and Bacon

Squash – oh my word, I am treading on dangerous grounds when I cook squash for supper. My husband hates them and I am to blame!

Squash Shame, that’s what I suffer from and I needed to redeem myself! You see, when we just got married, I was in “pleasing mode”! So one night I read somewhere that you can put a marshmallow in a squash and it will be delicious! Well, it’s not, it is awful and not even my children like it. My mistake most probably was that I used a pink marshmallow and not a white one. So, the humble veggie was killed…… by me!

I like them, with lots of butter, salt and nutmeg, maybe because it is a safe and quilt-free meal. I had a trick up my sleeve. what if I stuff it with cheese and bacon, kind of like a squash souffle!


So, you are dying to know, if hubby liked this! NOOOOOOO, not because  of the squash, but because I burnt the chicken. The kids loved it!

Squash with Cheese and Bacon

Makes 6 halves (3 squash)

Ingredients

3 squash – halved and pips removed

4 rashers Bacon – fried and chopped

1 x 150 ml Fairview Full Fat Yogurt

250 ml strong Cheddar cheese

2 – 3 eggs

salt and pepper

fresh sage

Method

Cook the squash until soft – I do mine in the microwave. In the meantime mix  the yogurt, cheese, bacon and eggs together. Chop some of the age and add to the cheese mix and keep some sage leaves whole for serving. Preheat oven to 180 C. Place the squash halves on a baking sheet and fill with the cheese mixture. Place a sage leaf on each half and bake until golden in color and puff up life a souffle.

* Cook’s Note: Replace bacon with 125 ml sauteed  onion.
