Pulled pork has gained popularity in South Africa with all the Southern Style cooking that we see on the Foodnetwork.

Pulled pork features in almost all the programs. First it was Paula Deen and Bobby Flay and now we are “challenged” with programs such as Roadtrip with G.Garvin and Guy Fieri’s Triple-D Special. Almost every restaurant or smokehouse they visit, makes pulled pork. I must say, even I am converted. My conversion came from the fact that it is such a versatile thing to make….. pulled pork! You can serve it on soft sweet potato gnocchi, make a pulled pork pie or serve a crowd with delicious pulled pork sandwiches with a kiwi salsa. So a leg of pork, can literally feed a crowd.

So why not try it this weekend. Invite a crowd of friends, make a pot of soup, pop a leg of hog in the oven and just celebrate life and friendships and food.

Pulled Pork with Kiwi Salsa

serves 10 – 12

2 kg shoulder or leg of pork
3 – 4 cloves garlic
1 thumb-size piece ginger – grated
salt and pepper
30 ml olive oil
1 x 400 g jar Pasta Sauce
500 ml craft beer or chicken stock
15 ml sugar or honey
juice of 1 lemon

Preheat oven to 160 C. Heat an oven proof cast iron pot on the stove. Season the pork with salt and pepper. Add the oil, garlic and ginger to the pot and then the pork, fat side down first. Brown the pork on all sides. Add all the other ingredients, place the lid on the pot and put in the oven for at least 2 – 3 hours. Once the pork is fork tender soft, remove from the sauce and use a fork to pull the meat into fine shreds. Reduce the sauce, if it is still very watery and then add the pork shreds to it. Add the lemon juice. Serve on crispy rolls with fresh lettuce and the kiwi salsa.
