Sticky Toffee

Sticky Toffee – imagine if I had coined or patented the phrase. I would have been a very wealthy cook, living on some exotic island, serving friends and family the finest of food at my long table.

The world goes crazy for stick toffee pudding, sticky toffee fudge, bread and butter pudding, you name it, but if it has stick toffee in front of it, the wow factor goes through the roof.

My daughter loves dates, my son hates is, but in a sticky toffee date cake, the dates are disguised under the buttery sweetness and they can devour  whole cake.

I associate dates with my gran’s Christmas pudding or my mom’s fruit cake and have always been reluctant to make anything with dates, because of the tediousness of the baking. Well, this Sticky Toffee Date cake could not be easier, well maybe if you bought it. I think it can work as muffins or as a dessert, but I prefer it as a cake with strong black coffee!

Sticky Toffee

Sticky Toffee Date Cake

Makes 1×20 cm cake


375 ml Safari Pitted Dates
350 ml water
5 ml bicarbonate of soda
60 g butter – cut in smaller blocks
2 eggs
350 ml self raising flour
pinch of salt
120 ml packed brown sugar

For the sauce

175 ml packed brown sugar
250 ml cream
25 ml golden syrup
25 ml butter

Sticky Toffee


Place the dates and water in a small pot and bring to the boil. Once it starts boiling, remove from the stove. Add the bicarb and butter and allow to cool for 20 minutes.
Preheat oven to 180 C. Line a 20 cm springform pan with baking paper.
Transfer the date mixture to your food processor and pulse until the mixture is smooth. Add the eggs and mix. Mix the brown sugar, self raising and salt and mix thoroughly. Stir the flower mixture into the date mixture.Spoon the mixture into the prepared pan and bake for 45 – 50 minutes or until a skewer comes out clean when inserted into the cake.
While the cake is baking, prepare the sauce. Place all the ingredients for the sauce in a small pot and slowly bring to the boil. Reduce the heat to a slow simmer and simmer for 4-5 minutes. When the cakes comes out of the oven, prick the whole cake with a toothpick and then pour about half of the sauce over the cake. Allow the cake to cool, before you remove it from the pan. Serve hot with the remaining sauce and whipped cream or ice-cream.

This Sticky Toffee Date Cake will be perfect to enjoy at Eid al-Fitr which is on Friday, the 17th of July.

Based on sight ability in North America, in 2015 Eid al-Fitr will start in North America a day later – on Saturday, the 18th of July.

Note that in the Muslim calander, a holiday begins on the sunset of the previous day, so observing Muslims will celebrate Eid al-Fitr on the sunset of Thursday, the 16th of July.

It is part of the Ramadan tradition to break the fast with dates. Most of its benefits are unique to this particular fast. The body benefits from the date’s high level of natural sugars. Sugars travel most quickly to the liver, where they are converted into energy more quickly than any other nutrient. Muslims have an immediate need for this energy when they break their fast, for they need energy to perform their sunset prayers.

    Thanks for the great recipe! My partner is a great fan of dates! So I normally have more than enough of them my pantry. I think I can impress him with this recipe! 🙂
