Cream of Tomato

Cream of tomato soup is such a retro retro.

Cream of tomato soup is not something that I grew up with. I can imagine my mom presenting her meat-eating husband with a bowl of cream of tomato soup and call it supper. Maybe that would have caused somewhat of a hiccup in their 50+ years of marriage. I do remember that my mom always had a packet of instant Cream of Tomato Soup in her cupboard. She uses it to make our favorite chicken recipe.

I do make tomato soup often, sometimes I add mussels, sometimes just basil, sometimes other seafood, but I am afraid just a plain Cream of Tomato Soup will also raise an eyebrow of two at my table.

If however I call it a starter or a shooter, I can get away with it and if I tell you it is just 3 ingredients, I bet I have your un-divided attention. Traditionally people serve sherry or bubbles to start a dinner, but at the moment it is so cold and wet that I have found a little warm shooter is more than welcome.

Cream of tomato Shooters

makes 10 shooters or serves 4 for dinner


1 x 400 g pasta sauce, I use this one
250 ml cream
freshly ground pepper
fresh basil for serving

For the Crisps
250 ml grated Parmesan Cheese


Make the crisps first. Preheat oven to 180 C. Line a baking sheet with baking paper. Make small heaps with about 1 table spoon of the grated parmesan on the baking paper. Leave spaces between each heap. Bake in the oven until the cheese has melted and browned. Remove from the oven and keep until needed.

Decant the pasta sauce in a small pot and add the cream. Heat until bubbling hot. Pour into shooter glasses, season with salt and pepper and top with a Parmesan Crisp and fresh basil.

    Hi Nina, where we live in the mountains, there is no such thing as bottled sauces etc, so please, if you have a good homemade recipe for fresh tomato soup, it would be appreciated. Many thanks for a lovely blog.
