Top 5 Vegetarian Recipes

Top 5 vegetarian recipes, so good even the carnivores amongst us will yield to the temptation.
We often eat meatless meals and no, we are not vegetarian. In fact we, we love meat, a good steak is hard to beat and we still buy lamb in bulk (if we can afford it) Sometimes my family does not even notice that they are eating a meatless meal. So I put together my Top 5 vegetarian recipes for you. We love them and eat them at least once or twice a month.
I think it is important at this stage to tell you that vegetarian does not imply slimming of low-fat or low-calorie. Some of my Top 5 vegetarian recipes have loads of butter and cheese it it, so don’t be fooled.
#1 – Potato Rosti
Without a doubt the #1 on my Top 5 Vegetarian recipes list. I love that something so simple can be so good. a few potatoes, butter, salt and pepper, that is all you need. Te other ingredients are optional. This is still my favorite breakfast……. crispy rosti with a soft poached egg on top!
#2 – Gazpacho
I can drink this Spanish soup in buckets full. It is so healthy and you can serve it hot or cold. Again simple flavors transformed into a delicious vegetarian meal.
#3 – Falafels
Whenever I hit one of Cape Town’s food markets, I frantically look for the falafel stand first. Served warm in a pita with crisp lettuce, hummus and tzatziki, it is without a doubt my favorite vegetarian market treat.
#4 – Risotto
No Top 5 vegetarian recipes list will be complete without a risotto recipe on it. I have many vegetarian options, but my favorite one is without a doubt the Wild Mushroom Risotto with Blue Cheese. It is creamy, earthy and so, so good!
#5 – Sweet Potato Gratin
Last, but by no means least on my list is this sweet Potato gratin. This recipe is the people’s favorite. Most probably the most popular recipe in my recipe book, friends refer to it as “Nina se patats” (Nina’s Sweet Potato). Actually, I prefer the sweet potato version to the normal spud version. The sweet and salty thing happening in my mouth when I eat it, is reason enough why this is one of my Top 5 vegetarian recipes.
