Easy Thai Salad to eat on just about everything

Easy Thai Salad that is delicious with meat, fish, chicken and at the moment, my favorite…… corn fritters.
Oh my word, every bite is an explosion in your mouth. It is crunchy, tangy, zesty, spicy and oh so moreish that you just cannot stop. The other night I made a platter full of corn fritters and just this Easy Thai Salad and the family literally scoffed it up in minutes. What makes this Easy Thai Salad so amazing, is that I used everyday ingredients in it. The most exotic ingredient being the soy sauce and you should all have a little soy in the cupboard for when the Eastern cravings hit you.
The reason why Thai food is so appealing to most people is because this cuisine gets the balance between sweet, sour, salty and bitter, just right. This Easy Thai Salad is no exception. I can imagine it to be the perfect partner to grilled chicken, fish, pork and even beef strips. I used a packet of grated carrot, beetroot and butternut that I bought from Pick n Pay, but you can use just carrot or just butternut.

Easy Thai Salad
serves 4
Ingredients
3-4 cups grated carrots – I like a coarse texture
1 small bunch spring onions – chopped
1 thumbsize piece ginger – peeled and grated
2 cloves garlic – grated
1-2 green chilies – chopped
1 – 2 red chilies – chopped
125 ml toasted, salted cashew nuts – roughly chopped
a handful fresh coriander – roughly chopped
juice and zest or 1 or 2 limes – depending on size of limes
15 ml peanut butter – or more if you like
30 ml light soy sauce – or fish sauce if you have
5 – 10 ml sugar
Method
Place all the grated and chopped vegetables in a mixing bowl. Add the nuts and coriander. In a separate bowl, mix the dressing ingredients and pour over the salad, just before eating.
Ps: You will see my measurements are not exact. You have to taste and adjust to your palate.
The salad is delicious as a salad or lunchbox treat. It also works on corn fritters or any grilled fish or meat.
Good Morning Nina, I love the salad, but the corn fritters were a bit of a disaster. As fried corn kernels they were fine though…. Do they not require some binding agent? I like the idea of a fritter that tastes of corn and not flour. Did I miss something?
