Caramel Popcorn Rocky Road with Sea salt

Caramel Popcorn Caramel Popcorn is my Achilles heel. Put that Caramel popcorn in some milk chocolate and you have a sugar rush of epic proportions. The sea salt will send you over the edge!

I have never made Rocky Road before, not exactly sure why, maybe this American invention of milk chocolate marshmallow was just overkill sweet for me. So why all of a sudden I had this desire to make Caramel Popcorn Rocky Road, heaven only knows, but I figured my children will be happy. To make your own caramel popcorn is just better than store-bought, but for this Rocky Road recipe you are welcome to buy, just know it won’t be THAT good!


Making the Caramel Popcorn is one thing, hiding it from the family until you get to use it is a another challenge. Whist making the caramel popcorn, there is this delicious buttery, sugary aroma in the kitchen which is very hard to explain if the evidence is hidden away. They will sniff it out like a pack of well-trained police dogs. So, work quickly and cleverly.

Caramel Popcorn

Caramel Popcorn Rocky Road with Sea Salt

makes 20 squares


4 – 5 cups popcorn – that is about 125 ml kernels

250 ml sugar – I use a light Muscavado (normal is fine)

30 ml water

50 g butter

125 ml cream

500 g milk chocolate

sea salt

Caramel Popcorn


Preheat oven to 180 C. Place the popcorn on a baking sheet, lined with baking paper. Place the sugar and water in a pot on the stove and very slowly heat so that the sugar can melt completely. Bring to the boil and boil until the syrup reaches crackling stage. I normally take a little bit of the sugar syrup and drip it into ice water. If it hardens immediately, it is time to add the butter. The mixture with splatter, so be careful. Mix in all the butter, return to the stove and add the cream. When the sauce becomes smooth and creamy, it is ready to bottle of use. In our case, pour  the caramel over the popcorn and mixed it until every bit of popcorn is coated with the sauce. Sprinkle with sea salt. Bake in the oven for about 20 minutes and cool.

Caramel Popcorn

Break the chocolate in smaller pieces and melt in a glass bowl over hot water. Spray a 20 x 20 tin or Pyrex dish with non-stock spray and place the caramel popcorn in it. Break the chunks into smaller pieces if necessary. Pour the melted chocolate over the top and allow to set. Cut in 20 squares and store in glass jars.  Not that it will last very long…..

Cook’s Notes

If you are using shop-bought caramel popcorn, simply place about 4 cups full in your Pyrex dish, Melt the chocolate and pour over the popcorn and lightly sprinkle the sea salt over the chocolate before it sets.
