Toasted Cheese with a horseradish kick!

Toasted Cheese and tomato sandwiches are our stock standard Sunday night grub. Lots of cheese, lots of black pepper on white bread. Sinful, I know, but delicious.
What is it that is so irresistible about melted toasted cheese? If I don’t put a stop to it, my children put grated cheese on a plate and melt it in the microwave just for an in between snack. Toasted Cheese sarmies with other toppings are also good, but it is that cheese and tomato combination that is a killer.
Our local Pick n Pay surprises me these days with their ever growing variety and exciting new produce. I can buy candied stripe beetroot these days, micro herbs and these days I can also get fresh horseradish at the vegetable section. We all know that creamed horseradish is traditionally enjoyed with roast beef, but a spoonful of fresh horseradish whipped into some mayonnaise is delicious with fish or even a baked potato. Mashed potato with horseradish is also different and very enjoyable, especially with bangers. I know you can buy it, but homemade is more fun and to me another thing I can tick of my to-do-list.

Toasted Cheese with a Horseradish Kick
serves 4
Ingredients
4 big slices rustic bread – I like a chunky sourdough bread
375 ml grated cheddar cheese
45 ml mayonaisse
15 ml grated horseradish – if you cannot find this, use Dijon or English mustard
2 eggs
salt and pepper
fresh thyme (optional)
Method
Preheat oven grill. Place the bread on a baking sheet. Mix all the other ingredients together and spread lavishly on the bread. Grill until golden brown. Serve with homemade tomato sauce.
