Raspberry jam Squares

Raspberry Jam Squares are just the best thing for a sweet treat in lunchboxes. Not to speak of a treat for mum with a cup of team mid morning.

Raspberry Jam Squares are so simple to make and the recipe fills a whole cake tin, which in my house will last a few days, unless I hide the tin. Basically a buttery shortbread dough with jam…… any jam! I like raspberry jam, because it is tangy and the raspberry jam squares is therefor not overly sweet. It is a good option for tray-bake sales at school or church events, so do give it a try…….. ya, ya, you can thank me in the comments below! This is really easy to make, it is literally a case of mixing ingredients in a mixer, bake and voila! Let me know what you think. I got this recipe from my dear friend Lisa Dinkelman, who still makes better jam squares than anybody I know, but this is my attempt. If I can do it, you can too!

My dough remained crumbly in stead of shaping into a bowl when I mixed it, but it also worked in the end!

Raspberry Jam Squares


325 g soft butter ( not melted)

300 g white sugar

seeds of 1 vanilla pod or 5 ml vanilla extract

2.5 ml salt

700 ml flour ( 2 3/4 cups)

80 g coconut

450 g raspberry jam

icing sugar for dusting


Preheat oven to 160 C. Place butter, sugar, vanilla and salt in your mixer and beat until it has a creamy, light color. Add the flour and coconut and slowly mix until it forms a soft dough. Divide the mixture  in 2 and press the one half in the bottom of a 25 x 35 cm pan which you have lined with baking paper. Bake the bottom layer for about 10-15 minutes or until it is slightly brown around the edges. Remove from the oven and spread the jam over the baked layer. Top with the remaining dough and bake for 30 minutes or until the top is golden brown.
