Brownie Cups with Chocolate Mousse – a sweet indulgence indeed!

Brownie cups are everywhere on the internet. Open Facebook and the flood of these self-help videos appear. First I thought, please people, what next, but then my children saw it and I fell for it….. line, hook and sinker.
Brownie cups turned out to be delicious! Well, they are brownies and brownies are good, so how could they not be? What makes this even more special, is that you use box brownie mix to make the brownie cups and the filling can be shop-bought chocolate mousse. Yes, it is all about easy cooking here in Nina’s Kitchen. If however you have a brownie recipe that you swear by, feel free to use it.
I have come to realize that I am definitely not ever going to be a great inventor, I dislike failure to much I suppose. so, whenever I see these clever tricks and self-help ideas, my first reaction is always……. “Hey, why did I not think of that?” The point is, I didn’t. Someone, one day worked out that if you put two muffin pans into each other with warm brownies in between, you will end up with brownie cups.
Brownie Cups with Chocolate Mousse
serves 12
Ingredients
1 box Ina Paarman Brownie Mix
1 liter Woolworths Chocolate Mousse
fresh berries of your choice
Method
Preheat oven to 180 C. Mix the brownie mix according to instruction on the box. Spray your 12 hole muffin pan with Spray ‘n Cook and then fill the holes 3/4 full with the batter. Bake for 10 minutes or until the mix is firm but soft to the touch. While the muffins are baking, take another muffin pan and spray the bottom (under) of the muffin pan. Remove the muffin pan from the oven and place on a work place. Use the empty muffin tin and put it in the pan with the muffins. Squeeze and place something heavy on top of the empty pan. Allow to cool. Scoop the mousse into a piping bag and fill the brownie cups. Scatter some fresh berries over the top and serve with a sprig of mint.
