Delicious Blondies with White Chocolate

Delicious Blondies, loaded with white chocolate chips, macadamia nuts and boozy Marachino cherries, oh my gosh it is impossible to resist.
Delicious blondies are the fabulous naughty sisters of the dark chocolate brownie brothers. Who does not like brownies, huh? Once you get a good brownie recipe, you stick with it. Maybe a twist here and there with nuts, sweets or even a pinch of salt, but keep the one hat you love.
I prefer making my Brownie without Chocolate version, because it is cheaper and I can make it more often. Here I added peanut butter to my recipe for these decadent Peanut Butter Brownies. Delicious Blondies on the other hand are indefinitely adaptable, they can be anything you want them to be. In blondies, the cocoa powder is replaced with vanilla which is a more subtle flavor, therefor making delicious brownies an open canvas to other flavors. Think candy, fruit, dried fruit, nuts, chocolate chips, booze……. anything you can think of! In my case I wanted to do white chocolate, macadamia nuts and strawberries, that was until I saw the price of strawberries.
I had some Marachino Cherries in the fridge so that was a good substitute. In summer when strawberries are a little more affordable, I will most definitely give them a try, because I think the slight tartness of the fruit will work well with the sweet delicious blondies.
Delicious Blondies with White Chocolate, Macadamia Nuts and Marachino Cherries
makes 16
Ingredients
125 g butter
120 g light brown sugar
200 g white chocolate – cut into smaller bits or grated
2 eggs
130 g flour
2 ml salt
100 g chopped cherries or 16 marachino cherries
100 g macadamia nuts – chopped
Method
Preheat the oven to 180 C. Lie a baking sheet with baking paper – my pan was 20 x 20 cm
Melt the butter in a small pan until the butter becomes almost nutty. Add half the white chocolate chips and stir until the chocolate is melted. Whisk together the sugar and eggs until is golden in color and foamy. Add the flour, salt and melted butter/chocolate mix and stir through. Add the other half of the chocolate, the nuts and the chopped cherries. Bake for 25-30 minutes or until the blondies have a golden color. Dust with icing sugar just before serving.
