Chunky Tomato Bean Soup

Chunky Tomato Bean soup with chunks of warm ciabatta…. what more can you ask for on a cold, rainy day.

Chunky Tomato Bean soup is not one of those soups you have to cook for ours on end. You don’t have to soak the beans, peel and chop the tomatoes – none of that. It can literally be ready in a few minutes. You see, I grew up in  a small town called Ceres and my mom, gran and my aunts preserved fruit and vegetables by bottling them when they were in season and abundant. My mom had a huge wooden shelf in her kitchen, dedicated only to preserved fruit and vegetables. Oooooo, the smell of ripe tomatoes while they were making the various tomato sauces and relishes is still so vivid in my  memory.

When tomatoes were in season, I made a few bottles of this sauce and yesterday when the craving for something warm and comforting prompted me to the kitchen, I could make lunch in literally 30 minutes.

If you are a frequent visitor to my site, you will know that I like to make things a little easier……. like using sausage to make meatballs. Yes, I know you can make good meatballs, I can too, but when in a hurry, crab a packet of good quality sausage next time you visit the supermarket and give it a try. Simply remove the skin off the sausage and roll into meatballs, it is that simple.

serves 4


500 g good quality sausage

30 ml olive oil

3 x (16 oz) jars of Italian Style Tomato Sauce

80 g tomato paste

250 ml water or beef stock

2 x 410 g tins Cannelini Beans

10 ml Chipotle Tabasco sauce

5 ml sugar

warm bread for serving


Remove the sausage meat from the casing and roll into small bite-size meatballs. Heat a pot on the stove and add the olive oil. Brown the meatballs on all sides and when they are cooked, add all the other ingredients, except the bread. Cook the soup for 10 minutes so that the flavors can blend and the soup can reduce and thicken slightly. Serve with chunks of warm buttery ciabatta.
