Apple and berry Slices – nutritious and so delicious!

Apple and Berry slices are just the bomb. Apple and berry is such a classic combination. The sweetness of the berries is a perfect match to the tartness of the green apples.
These Apple and Berry Slices are also perfect for lunchboxes. They are filling, not overly sweet and you can freeze them and every morning just take one black out the freezer, pack it and by break time, it will be delicious.
If you like Apple Pie or Crumble and you like Crunchies, you are going to fall in love with these Apple and Berry Slices. They are a combination of three different recipes, so how on earth can it not be good. Of course you can replace the apples with pears or peaches and the berries can be whatever is in season, even frozen. You can really combine flavors that work for your family.
You basically make a crunchy mix, add an egg and put a layer of fruit in between two layers of crunchy mix. How easy is this…..
Apple and Berry Slices
Ingredients
For the crunchy mix
750ml coconut
250 ml cake flour
4 x 250 ml dry oats
375 ml sugar
2.5 ml salt
5 ml cinnamon
250 ml butter
3 Tbs maple syrup
10 ml bicarb dissolved in 60 ml milk
1-2 eggs
For the filling
1 x 765 g can pie apples
250 ml fresh or frozen berries
125 ml sugar
Method
Preheat oven to 180 degrees Celsius
Mix all dry ingredients
Melt butter and syrup and egg.
Add bicarb mixture.
Add to dry ingredients. Mix. Now press 3/4 of the mixture in the bottom of a baking tray. Mix the sugar with the fruit and pack on top of the crunchy mix. Top the fruit filling with the remainder of the crunchy mix. Bake for 35-45 minutes and cut into cubes when cooled down. You can drizzle with white chocolate or serve with a dusting of icing sugar.
