Marmalade Cake

Marmalade Cake is a winter indulgence of note. It is packed with citrussy flavors and your taste buds will be dancing between the bitter, sweet and sour notes.

This marmalade cake is the quickest cake you will ever bake and whether you use my marmalade recipe or buy it in a jar at your local grocer, just bake the cake will you?

As a child I never liked marmalade, quite frankly I don’t know of any child who actually likes it, but now it is my go-to-comfort food. After a long and stressful day, I am happy to replace dinner with a hot cup of tea and a slice of toast with marmalade.

The cake itself is based on the pound cake, which in essence is equal quantities flour, sugar and butter. I love this recipe, it is made with stock items and you can chop and change as you wish, it is a very forgiving recipe.

make one loaf

220 g cake flour
10 ml baking powder
½ t salt
250 ml double thick yogurt
250 g sugar
3 large eggs
100 ml marmalade
125ml vegetable oil

For the glaze

100 ml marmalade


Preheat your oven to 180C and line a large loaf tin with baking or silicon paper. Sift together the dry ingredients, flour, salt and baking powder. In another bowl, whisk together the yogurt, eggs and marmalade and then slowly mix the dry and wet ingredients. Lastly fold in the oil until it is fully incorporated into the batter. Pour batter into the prepared loaf tin and bake for about 45-50 minutes or until a skewer comes out clean when inserted into the loaf.
Meanwhile heat the marmalade for the glaze in a small pot. When the loaf comes from the oven, leave in the pan for a couple of minutes, because it will break if removed from the pan to quickly. After about 10 minutes, remove the loaf from the pan, place on a wire rack and pour over the warm marmalade.
