Yes, you can have Peanut Butter Chocolate Chip Cookies this week, life is just too short and fragile not to. The truth is that these cookies are so good you need to have stash hidden in your cupboard at all times. These cookies can make a difficult exam paper better, heal broken hearts and impossible deadlines become possible after a few of these buttery cookies.

Errieda du Toit started this “cookie drive” in me. I read about her Peanut butter cookies made with only 3 ingredients and it all went haywire from there. Just like Errieda, I was a bit of a doubting Thomas at first. I turned to Pinterest and Google, just to find a gazillion versions of this easy recipe. I opted for the Peanut Butter Chocolate Chip Cookies as I have a thing about chocolate at the moment. You know how it is when you try to avoid a certain ingredient……. it finds YOU!

October is when my mom starts baking her fruit Cakes for Christmas and begins to fill the cookies bucket (yes, BUCKETS!) with her delicious homemade cookies. I need to seriously give her this recipe, although I suspect she will be a doubting Thomas too.

I am not sure who invented this cookie recipe, according to Errieda, the Peanut Butter version is a Paula Deen invention.

Peanut Butter Chocolate Chip Cookies

Peanut Butter Chocolate Chip Cookies

makes 24 cookies

Ingredients

250 ml peanut butter ( it is a full 400 g jar) – I used chunky

250 ml soft brown sugar

5 ml baking powder

1 egg

45 ml cocoa powder

chocolate chips – optional ( you can use salt flakes instead)

Method

Place all the ingredients, except the chocolate chips  in you food processor a mix thoroughly. Line 2 baking sheets with baking paper and roll 24 even-sized balls with the dough. Make sure there is enough space between cookies as it does spread a little. Use the bottom of a glass and press the cookies to about 4 mm thick. Scatter a few choc chips on each cookies or salt flakes if you are using. Bake for 8 minutes and cool before removing them from the baking sheets. Keep in an airtight container.

Ps. For  a special treat, use these cookies to make ice-cream sandwiches.
