Spicey Apple Coffee Cake

Spicy Apple Coffee Cake on a Sunday afternoon after a nap, what on earth can be better?

Having a second slice of Spicy Apple Coffee Cake just before you go to sleep, that can be better indeed. I love weekend baking, I guess it is how I grew up. My mom always baked on weekends, in case the neighbours come for a cup of coffee. This was my mom’s favorite chocolate cake, or shall I just say it was our favorite that she always baked for us. Another favorite of hers was this Apple and Coconut Crumble which we devoured with whipped cream.

The basis of this delicious Spicy Apple and Coffee Cake is my old trusted friend, the pound cake. Yes, when in doubt, I go with what I know. I always tell people who attend my classes, if you can bake a classic sponge, you can indeed bake a different cake every day.

Here are my favorite recipe – all variations of the trusted pound Cake!

The added spices and almonds, together with the buttermilk I used instead of milk, makes this cake super-moist and rich. I also replaced the butter with oil. Add to that the caramel and apples and you have a very decadent and beautiful cake.

makes 1 cake


To make the caramel

makes about 400 ml


250 g caramel toffees – I used Candy Tops Creamy Toffee

125 ml cream


Unwrap the toffees and place in a small pot with the cream.  Heat the cream and toffees on a very low heat until the toffees have melted completely.  Stir the sauce and cool in a glass jar!

For the cake

3-4 apples – I used Golden Delicious

1/3 of the caramel sauce

500 ml self raising flour

10 ml baking powder

500 ml sugar

3 ml salt

10 ml fine cinnamon

3 ml fine nutmeg

3 eggs

200 ml vegetable oil

250 – 300 ml Faircape Amasi

Make your caramel first, even better make a few batches of the caramel and keep in the fridge. It is delicious on ice-cream, crepes and eaten in the middle of the night when everyone is sleeping.

Preheat oven to 180C. Spray a spring form pan with Spray n Cook or line with baking paper. Pour 1/3 of the caramel sauce in the base of  pan. Peel and cut the apple in thin slices. pack the apples in a fan pattern on top of the caramel.

Place all the ingredients for the cake in your mixer and mix until thick and luscious. Spoon over the apples and bake the cake for 45-50 minutes or until a skewer comes clean when inserted into the cake.
