Pulled Pork Sliders

Pulled Pork Sliders are 100% my kids favorite. Yesterday while shooting these images, they were literally hovering and drooling over my shoulder.

Pulled pork sliders are also the best way to deal with leftover pork after your Christmas lunch this year. I have to say that I love Christmas leftover meals almost more than the Christmas lunches itself. I think all the panic and rush is over and faced with all the amazing leftovers and a loaf of bread, the possibilities are endless.

A slider is an American term for a small sandwich, typically served in a bun. Although it refers to small hamburgers, it can also be a small sandwich served in a roll.

I had a huge function on Wednesday and cooked a gigantic 8.7 kg pork roast. It took 12 hours, phew! Of course I always over catered ( I tell myself after every function not to. I even have recorded the correct portion sizes, but still…….I over cater)

Anyway, I had enough shredded pork left to make these delicious Pulled Pork Sliders with Pineapple and Slaw.

Pulled Pork Sliders

Pulled Pork Sliders with Pineapple and Slaw

makes 24


2 kg leg of pork
15 ml smoked paprika
salt and pepper
30 ml olive oil
500 ml  chicken stock
juice of 1 lemon

125 ml BBQ sauce or your choice.


Preheat oven to 160 C. Heat an oven proof cast iron pot on the stove. Season the pork with smoked paprika, salt, pepper and coriander. Add the oil to the pot and then the pork, fat side down first. Brown the pork on all sides. Add all the other ingredients, place the lid on the pot and put in the oven for at least 2 – 3 hours. Once the pork is fork tender soft, remove from the sauce and use a fork to pull the meat into fine shreds. Reduce the sauce, if it is still very watery and then add the pork shreds to it.

To serve

250 g cream cheese or mustard or both

500 ml coleslaw

2 pineapples – peeled and cut in slices


Cut open the buns and spread the cream cheese and/or mustard on the bottom halve. Top with Slaw, then a pineapple slice and finally the pulled pork. Serve and see how quickly 24 sliders disappear.
