Raspberry Coconut Pound Cake

Oh, this Raspberry Coconut Pound Cake was so good.  It had the perfect balance between sweet and sour. So if you do not like overly sweet cakes and desserts, this is definitely something to try.

I baked this Raspberry Coconut Pound Cake last night and it is gone, every last crumb of it. The history of the pound cake is quite an interesting read and I also found this great tutorial on the Science behind the Pound Cake . Of course this is the basic Pound cake, you can play around with so many different and delicious flavors. Think Cherry and Almond Mini Pound Cakes, Lemon Pound Cake, or even chocolate is delicious.

2oo g butter, room temperature ( it should be 250 g, but I find it very rich)
250 g flour
½ cup/125 ml desiccated coconut
250 g castor sugar
4 eggs
2 t / 10 ml baking powder
½ cup/ 125 ml Fairview Full Fat Yogurt
2 t / 10 ml vanilla extract
1/2 t salt
fresh raspberries

For the icing

1 cup / 250 ml icing sugar
juice of 1 lime

Preheat oven to 180 C/350 F. Spray a loaf tin with non-stick spray and line the bottom with baking paper.
Cream the butter and sugar until light in color and fluffy in texture. Add the eggs one at a time while running the machine. Mix the flour, coconut, salt and baking powder together and then add to the butter mix, while the machine is running on slow. Lastly add the yogurt and mix through. Do not over mix.
Pour the mix in the loaf tin. Take half the punnet of raspberries and push randomly into the batter ( I use a toothpick ). Bake until a toothpick inserted in center of cake comes out clean, about 1 hour. Allow to cool in pan 15 minutes. Invert onto a wire rack, and turn upright to cool completely.
Mix the icing sugar with the lime juice and pour over the loaf. Lastly pile the leftover fresh raspberries on top of the loaf and make a cup of tea.
