Easy Easter Bunny Cupcakes – kids are loving this!

These Easy Easter Bunny Cupcakes I saw on Instagram, so I cannot take any credit for the idea.

I loved the Easy Easter Bunny Cupcakes, firstly because they are so cute and because they were so easy to make and kids can join in the fun of making them. They also have fur made with freshly grated coconut and I LOVE coconut. This clever idea is from Preppykitchen and you can follow him on Instagram. He has the most amazing feed. He has a short video to show you how to make these cute Easter Bunny Cupcakes. Of course my Easter Bunnies looks a but rustic compared to his, but they were so delicious.

The ideal frosting to use for the Easter Bunny Cupcakes is a marshmallow frosting, it is not so overly sweet and it gives you the height you require for the bunny’s head. I got this easy-to-make recipe from Annelien Pienaar. She has a brand new website called Annelien Pienaar Food Consultant, but you will all know her fondly as the bread goddess from Boerekos Met ‘n Twist. The Marshmallow Fluff recipe is still on the old site, but they are in the process of moving them all.

Ok, so we have the frosting sorted, now for the cupcake recipe. I have tried many, this one works for me. So get all the elements for your cupcakes together and call the kids, it is a lovely Easter long weekend activity.

Easy Easter Bunny Cupcakes

makes 12

Ingredients

2 cups/ 500 ml self-raising flour
pinch of salt
3 eggs
1½ cups/ 375 ml castor sugar
1 cup/250 ml boiling water
½ cup oil
1 t vanilla extract

Method

Preheat oven to 180C and place the cupcake holders into the muffin baking tray. Combine the water, oil. Beat the eggs and sugar until pale in color and creamy. Add the flour, salt and fold in, adding the wet ingredients while you are mixing. Spoon into the paper cups and bake for 12-15 minutes. Allow to cool.

For making the bunnies you will need

1 batch Marshmallow Fluff Frosting

12 white marshmallows

12 small round marshmallows for the noses

red jelly powder

black liquorice for the eyes
