Caprese Bombs

These Caprese Bombs are just the bomb, pardon the pun.
Caprese Bombs made with 5 ingredients, I kid you not. The recipe makes 20 and they flew off the plate before I could take proper pictures. The kids (and dad) absolutely loved them. A traditional Caprese Salad is a salad made with fresh tomatoes, fresh mozzarella and fresh basil. The three colors of the Italian flag. So, that makes my Caprese Bombs Italian hybrids, I think.
South Africa’s most loved Tomato Sauce is once again turning up the magic with the launch of two 700 ml Limited Edition collectable bottles. These Limited Edition painted bottles will be available in two designs. The ‘Crammed Full of Tomatoes’ design, which celebrates the fact that ALL GOLD Tomato Sauce is crammed full of tomatoes, and free of thickeners, colourants and preservatives. The second design, the ‘Crammed Full of Local Flava’ version, embraces ALL GOLD’s tradition, which is intrinsic to our rich local South African heritage. The design includes classic South African-isms, favourite foods and colourful greetings that South Africans from all backgrounds will identify with and enjoy.
Caprese Bombs
makes 20
Ingredients
1 kg store-bought bread dough ( ask your local baker)
250 ml All Gold Tomato Sauce
250 g mozzarella cheese – cut into 2 x 2 cm cubes
fresh basil leaves
750 ml oil for frying
Method
Divide the dough in 20 even-sized balls. Use a rolling pin or use your hands to flatten each ball into a round “mini pizza”- about 4-5 cm in diameter. Use your finger to wet the edges of the dough with water. Place a cube of cheese in the middle, top with a little tomato sauce and lastly a basil leaf. Bring the edges together and give it a twist to ensure the filling does not leak out during frying. Repeat the process until all the “bombs are finished. I use baking paper with a little flour to place the “bombs” on while I finish the batch.
Heat the oil in the pan or wok and fry the bombs until golden brown. Serve with more tomato sauce, fresh basil, fresh tomatoes and grated parmesan as an optional extra.
Cook’s Notes – This is perfect for lunchtime when the children come back from school, Sunday-night movie time or for the men watching rugby.
