Greek Lamb Chops with Mint Pesto – quick stix and dinner is served.

We had Greek Lamb Chops with Mint Pesto and golden oven-baked potato wedges for dinner last night. I missed out, because unexpected quests arrived, but from the family’s reaction, it is good! Very good!

So, what makes the lamb chops Greek? Well, authentic Greek flavors for anything is olive oil, lemon, garlic and Greek oregano or mint. I buy my fry herbs from Giovanni’s in Greenpoint, but if you or your friends ever travel to Greece, bring some herbs with if you can, it is just different and better.

The beauty of these Greek Lamb Chops with Mint Pesto is that it goes into one tray, no mess, no fuss. The pesto of course you must make separately, but you can enjoy a jar of pesto on Sandwiches, cold meats, salads etc.

Greek Lamb Chops

Greek Lamb Chops with Mint Pesto

serves 4


8 lamb loin chops

1 lemon – keep zest for the pesto

60 ml Olyfberg Olive oil

30 ml Greek oregano – I prefer dry and fresh – replace with rosemary if you cannot find

1 bulb garlic – cut in half

salt and pepper

4 par-boiled potatoes – cut in wedges

4 small onions  cut in half – or cut a big onion in wedges

250 ml – black olives


Pre-heat the oven to 200 C. Rub the lamb chops with olive oil. Squeeze a little juice over each chop. Season with the dry herbs, salt and pepper. Place the chops in a oven try. Pack the potatoes and onions in between the lamb chops. Drizzle olive oil over the potatoes and onions and season with the same spices. Lastly add the olives, the garlic and bake in the oven for 35-40 minutes, turning the chops halfway through the cooking process. Serve with a fresh Greek Salad and mint pesto.

Mint Pesto

Place the following ingredients in a blender:

2 cups fresh mint
2 cloves of garlic
zest and juice of a lemon
1/4 cup flaked almonds
1/2 cup grated parmesan cheese
While machine is running add about 1/4 cup  olive oil. Salt and pepper to taste
