Braaibroodjie Tutorial – South Africans should know this.

A Braaibroodjie Tutorial, say whaaaaat? Yes, Here is my top tips for making delicious braaibroodjies. ( For all non-South-Africans, it is a sandwich, traditionally made with cheese, tomato and onion and cooked on a grid on the open fire.) Maybe I am naive in thinking that people don’t know about braaibroodjies, I found article about it on The Kitchen, how awesome is that?
My Braaibroodjie Tutorial is based on what WE like on a braaibroodjie. The purists will most probably have a heart attack, but my family and friends love it. South Africans are quite obsessive about their braaibroodjies and every family swears by their “recipe”. Here are a few crazy variations:
Apricot Jam, tomato, onion and cheese
Chutney, tomato and Cheese
Basil, tomato and Mozzarella
Ham, cheese, mayo and tomato and the list goes on.
Quite frankly, I could eat all of those, but do they define a braaibroodjie? I don’t know and I don’t care. Cook the food you family loves people, it is the road to success.
So let’s get going.
The Bread
The list of breads to choose from is endless. So I’ll give you my personal favorites:
Ciabatta
White (goverment) loaf
Pitas
Bread rolls
Panini’s
Vegetables
Tomatoes – I prefer fresh, ripe tomatoes, but canned, sun-dried and chutney can work.
Onions – red or white, even a red onion marmelade is delicious. Even little pickle onions will give a delicious tang to your braaibroodjie.
Peppers – red, green or yellow

Cheese
Cheddar – I love a good mature cheddar. Lately I love Fairview’s new Cheddar Range (just check out all the delicious flavor combinations)
Mozzarella – will always deliver on the cheese pull
Camembert or Brie – for a more sophisticated crowd
Feta
Goat’s Cheese
Other toppings
Cured Meats
Bacon
fresh herbs
garlic
chutneys and relishes
So here are my two favorites
Red Onion Marmelade and Cheddar
serves 4
Ingredients
8 slices ciabatta
4 t/20 ml Dijon mustard
4 T ( or more ) Red Onion marmalade
1 x 100 g Fairview Cheddar Dried Red Onion- grated
salt/pepper to taste
4 t butter
Method
Spread the mustard on 4 of the slices of ciabatta. Top with the onion marmalade and grated cheese. Season with salt and pepper. Close the sandwich with the other slice and butter both sides of the sandwich. Toast on in a grid, very slow open fire or in the paninni machine.
Classic Tomato and Cheese
Ingredients
8 slices white bread
2-3 ripe tomatoes
1 small onion – sliced
1 x 100 g Fairview Cheddar Tomato and Chili – Grated
60 g/ 4 T grated mozzarella
salt and pepper to taste
Method
Pack the tomato, onion, cheeses, salt and pepper on 4 op the slices. Top with the other 4 slices and braai on in a grid, very slow, open fire or in the paninni machine.

Enjoy with tapas, chorizo and spicy stews. Pairs beautifully with the cheese varieties with onion and chili.
