Summer Fruit Tarts

These Summer Fruit Tarts are almost too pretty to eat, but every mouthful is an explosion of summer. Exactly the thing you should be eating in Summer, right?

My Summer Fruit Tarts I make with only 4 ingredients, yes just 4! Which makes them affordable, easy and ready to eat in a jiffy. We have such a bounty of summer fruits at the moment, I make these tarts different and interesting every time.

My daughter is a teen as you all will know. With that comes the endless hours in front of the mirror and the “make-up” bag. She often tells me: ” Mom, you only need a good foundation, a good concealer, a good blusher, and a good eye-liner, then you are sorted. My response is always: “Then why the heck do you need the tog bag to store all your make-up?” Anyway, as with missy’s make-up, I have a few pantry and freezer items that keeps me ready for any unannounced guests. Puff pastry is one of them. Chose apricots, peaches or plums for these tarts, because they are tart and not overly sweet. I also find that the stone fruits keep their shape and looks really vibrant and pretty. I had a few raspberries and used them too. So, let’s bake.

makes 24

Ingredients

2 rolls puff pastry – I prefer Woolworths

12 apricots or plums – halved and pips removed

24 teaspoons sugar

24 nibs of butter – a nib = ¼t butter

Method

Preheat the pan to 180 C. Spray 2 muffin pans with non-stick spray. Cut 24 small rounds of baking paper to go in the bottom of 2 muffin pans. Put 1 teaspoon of sugar in each of the muffin cups and top with a nib of butter. Now place the fruit halves on the butter and sugar with the round side of the fruit at the bottom.

Use a 7 cm cookie cutter and cut 24 rounds from the puff pastry. Place a pastry round in each muffin cup and tuck it in around the edges. Bake for 20 minutes or until the puff pastry is golden brown. Cool for a few minutes so that the syrup can settle. Use a spatula and remove the tarts. Remove the baking paper and serve with bowl of cold whipped cream and a dusting of Festive magic.
