Watermelon Lollies

Watermelon Ice Lollies are fun to make and the kids love them so much. So when you make them, make as many as you can, because they literally fly out the fridge.

My watermelon ice lollies are made with jelly, I find that the lollies do not freeze to hard and it is a little less messy when you eat it. No idea why.

I have made many ice lollies in my days. Sometimes when I have a little fruit juice left in a bottle, I quickly make one or two ice lollies. They never last long. I think we all have a kid in us somewhere, just wanting to jump out. I even have an adult version – yes, these G&T lollies are the bomb.

Watermelon is in season now, so you can either go for a very refreshing Watermelon Sorbet, or try these lollies.

makes 12


500 ml watermelon juice (see explanation in method)

1 packet red jelly – strawberry is fine

1 packet green jelly

225 ml boiling water

250 ml coconut milk

10 ml sugar

5 ml black mustard seeds – optional

Watermelon Lollies


Put chunks of watermelon into a food processor and pulse until you have a slush. Strain through a sieve or muslin cloth to remove all the pips. Your must have about 500 ml of the strained juice. Pour the watermelon juice into a small pot and add the red jelly powder. Slowly heat until the powder has dissolved. Add the mustard seeds to resemble the pips. Pour into the moulds to about ½ full. Place in the freezer for about 10 minutes. Then insert the wooden sticks into the almost iced lollie. Dissolve the green jelly powder in the boiling water and put one side to cool. Mix the coconut milk and sugar and pour into the moulds to about ¾ full. Freeze. Lastly pour in the green jelly and fill to the top of the mould. Freeze until hard and enjoy.
