The Lamb Pinwheels are a breeze to make if you know and respect your new found best friend….. the butcher. In my case, my new found butcher is Klein Merino. Klein Merino is in Beaufort West, but they have an extensive delivery service into Cape Town. So orders in by Monday and meat delivered by Thursday. I love it! So I ordered the deboned lambsrib, which is stuffed with boerewors stuffing and rolled into a perfect roast. The butcher did it all for me! Yeah! I of course had other plans, so my dad cut the roast in 1.5 cm rolls and I skewered the rolls onto wooden skewers. Yes, you can do a Sunday roast. Just roast in a casserole for 1h30 min at 180 C. Our idea was so cool, I mean where else will you get your chop and sausage in the same mouthful.

The stuffing is already seasoned so go easy on the spices. We did a little salt, pepper and lemon.

serves 4-6

Ingredients

1 x 1.5 kg deboned lambroll – order from Klein Merino

5-10 ml salt

5 – 10 ml pepper

juice of 1 lemon

wooden skewers – you can use rosemary twigs as skewers too

Method

Ask the butcher to tie the lamb roll with 2.5 cm between each string. Use a very sharp knife and cut in between each piece of string so that you have 2 cm thick pinwheels. Use a wooden skewer to secure the ends of the pinwheel. Seson the meat with salt, pepper and lemon juice. Bring the coals to medium heat and braai until brown on the outside and still pink on the inside.
