Zoodles with Pesto

Zoodles with pesto…… yum! Possibly the most flavor in the quickest amount of time.

Zoodles with pesto are noodles made with zucchini for the un-informed. Which makes this dish banting-friendly, paleo-friendly, LCHF-friendly and gluten-free. Quite extraordinary for something so simple. I think zoodles came on the map with the above mentioned eating life-styles. People saw the benefit of not eating loads of carbs, but they still needed the comfort of pasta. So, the spiralizer (available from Yuppiechef) appeared out of nowhere.

Zoodles are just so easy to make and you can have “spaghetti bolognaise” on the table in two ticks. Salads are no longer boring, they are fresh, packed with flavor and low in carbohydrates.

This bowl of zoodles with pesto is a meal on its own. I used Pesto Princess Basil Pesto (delish), but you are welcome to make your own if you have lots of basil in the garden. Add to the zoodles some sun-dried tomatoes and Fairview Cream Cheese with Sun-dried Tomatoes. See, done and dusted. How easy was that. If you do not have a spiralizer, you can simply buy zoodles from Woolworths.

serves 4


4-6 big zucchini – washed but not peeled

1 jar Pesto Princess Basil Pesto

125 ml halved sun-dried or fresh cocktail tomatoes

salt and pepper

1 x 80 g Fairview Creamcheese – crumbed

Zoodles with Pesto


Use the spiralizer as per instructions on the package and cut all the zucchini into zoodles. Place in a glass bowl and microwave for 4o sec. I do not like to cook the zoodles, I prefer a little crunch. It is important to heat the zoodles though, it absorbs the pesto better. Once the zoodles are slightly warm, use a fork to toss the pesto into the zoodles. Scatter the tomatoes over the top and lastly the crumbed cheese. Season with salt and pepper if necessary.

We enjoyed our Zoodles with pesto a pan-fried chicken breast. Simple and utterly delicious!

PS: The wine of choise for me with this dish, would have to be Fairview Viognier. Of course ice cold!
