Smoked Chicken Rice Salad

Smoked Chicken Rice salad with hints or curry and fresh mango – Oh my word, I cannot even describe how delicious it is. Especially in this heat.

My Smoked Chicken Rice Salad is also the perfect way to showcase the amazing wood-smoked chicken breasts I get from Klein Merino. They are so beautifully smoked, plumb and juicy with just enough salt. My kids think I am the bee’s knees if I pack sarmies with smoked chicken and mayo and in a salad it is so good!

Anyway, I grew up with rice salad. My mom’s rice salad always had peas and mayo and maybe an onion finely chopped. It was made with the leftover rice she had. Even as a kid I loved it (very few thing of my mom I did not like!) My mom always made it with a meal and not AS the meal, like I have done here. The flavors are what we love, but the canvas is yours to chop and change as you wish.

Smoked Chicken Rice Salad

serves 6


2 large plump Klein Karoo chicken breasts – diced

1 of each color peppers (red,yellow,green) – diced

a medium onion – finely chopped

2 large mango – peeled and diced

3-4 cups cooked white rice

1 T/12,5 ml strong curry powder

salt and pepper

+- 1 cup good quality mayonaise

a big handful of fresh coriander – chopped

125 ml chopped salty cashew nuts – optional but really good!


Place all the ingredients in a large mixing bowl and mix thoroughly. Garnish with more fresh coriander. Enjoy

    I love the recipes, but I have a problem with recipes sourcing products from specific shops, such as shops exclusive to certain areas/towns in SA. Really too clicky for me.

      Thank you Katryn for your visit and your comment. I shop at our local shops, just like you and try not to be a food snob, whenever you see ingredients from a specific shop or area, is because I developed a recipe for that specific shop. In this case I think you are referring to the meat source. There is no reason why you cannot get the same product at your local shops. I am sorry if I have offended you in any way.
