Spicy Lamb Goats cheese Pizza – nothing about this sounds right. Definitely not authentically Italian. I would say, in flavors, rather Moroccan!
The Spicy Lamb Goats cheese Pizza with fresh figs was a mouthful, delicious on I must say! So, where on earth did I get this flavor combination from, I hear you ask. Let me explain….
If there is one thing I hate more than rude people, it is bland food. Seriously, why bother. No, I do not expect caviar and truffles on every meal, but at least season the food properly. Sometimes, all it needs, is a pinch of salt. The one thing I teach over and over again, is this: The more senses you can please with every bite of food, the more memorable the meal will be. So, try and bring in salty, sweet, sour, bitter and the ultimate umami flavor. Which brings me to this pizza. I have to say, I love a good Margherita Pizza, provided that the sauce is good, the base is crispy and the cheese is just right. The pizza was just a combination of flavors I like, but it ticked off all the boxes – sweet, salty, sour, bitter and umami. Not to talk about all the delicious textures.
The Fairview Chevin is a strong flavored, creamy cheese, but it needs another bold flavor to balance. The watercress brings relief from the faty lamb and cheese. The figs, oh my…… the sweetness just perfect!
Spicy Lamb Goats cheese Pizza with fresh figs
serves 4
Ingredients
4 thin pizza bases – I order from my local pizzeria – wood-fired, thin and crispy. You can make your own.
500 g lamb mince
30 ml olive oil
1 large onion – finely chopped
2 cloves garlic – finely grated
5 ml cumin
salt and pepper to taste
5 ml smoked paprika
15 ml tomato paste
a little water if necessary
8 fresh figs
fresh watercress
2 x 100 g Fairview Chevin – any flavor you prefer
2 cups grated mozzarella cheese
Method
Heat the olive oil in a pot and fry the onion and garlic until soft and add the salt, pepper, paprika and cumin and stir through. Add the lamb and use a fork to loosen the meat. Add the tomato paste and a little water if necessary. Cook for about 10-15 minutes or until the meat is cooked. Taste and season accordingly.
Preheat the oven to 220 C. Divide the meat between the four pizza bases and spread the meat to cover the entire base. Top with the mozzarella and bake until the cheese is bubbly and melted. Just before serving, top each pizza with watercress, little bits of the goats cheese and halved figs. Enjoy!
