Stuffed Lamb Rolls – Our Christmas Centrepiece (Video)

These Stuffed Lamb Rolls will take centre stage on our Christmas table this year.
My Stuffed Lamb Rolls are proudly South African and just between you and me, I am not a big gammon fan. I cook the gammon, but if I had to choose, lamb or beef would be my choice of meat. We are also making the whole salmon baked in salt as a starter. We are in for a delicious Christmas feast.
Ok, back to the lamb rolls. The lamb cut of choice here are the ribs. It is not too fatty and it is packed with flavor. So, if you are a fist timer here on My Easy Cooking, this piece of advice is for you make friends with your butcher. Ask the butcher to debone the ribs for you if you are not, it takes the effort out of Christms.
I order my meat from Klein Merino and they supply the lamb rolls complete and ready for the oven. These lamb rolls are already stuffed with a spicy sausage filling. My dad and I unrolled the lamb and added a layer of spinach between the lamb and the sausage stuffing , just because it is Christmas and we wanted to add some colour and flavour.
Stuffed Lamb Rolls
serves 10 – 12 ( we also had other meat options)
Ingredients
2 kg de-boned lamb rib
+- 500 g good quality sausage mix
1 bunch spinach – trimmed and washed
2 carrots
1 large onion
2 sticks celery
125 ml water or wine
2 sticks rosemary
Method
Lay the rib on a work surface and season with the space mix. Next put a layer or spinach on the ribs. Lastly add a layer of sausage meat. Roll the meat up tightly and tie with string.
To Cook: Preheat oven to 180 C. Place the lamb rolls in an oven casserole with a lid. Add the carrots, onion, rosemary, celery sticks and water. Cover with the lid and roast for 2 hours. Pour the gravy through a sieve into a small pot and cook to reduce. Just before serving, place the lamb under the grill to crisp up the lamb. Serve with all the gravy and all the other delicious Christmas dishes.
