Wild Mushroom Cannelloni

My wild mushroom Cannelloni surpassed all my hungry expectations. The flavor was something else.

The wild mushroom Cannelloni did not take that long to make either. Ok, so you dirty two pots in the process, but the end result will make you forget those pots in no time.

Wild mushroom Cannelloni

Serve 4


12 cannelloni tubes – no need to pre-cook
30 ml olive oil
250 g brown wild mushrooms – cut in very small dice
a few sprigs fresh oregano or thyme
1 large onion – finely chopped
2-3 cloves garlic – finely chopped
5 ml smoked paprika
5 ml salt
100 g Fairview Chevin with Black Pepper & Paprika
100 ml grated parmesan

White sauce

30 ml butter
40 ml all purpose flour
pinch salt
625 ml milk
a few drops liquid smoke – optional (it makes a difference through)


80 ml freshly grated parmesan
a handful fresh parsley
a few wild mushrooms – it looks really cool
1 jar ready made pasta sauce – optional


Pre-heat oven to 180° C (350 F). Spray a 23×30 cm baking dish with Spray ’n Cook, set aside.

Mushroom Filling
In a medium frying pan over medium heat add the olive oil, chopped onion and garlic. Sauté until onion is soft, but not mushy. Increase the heat and add the mushrooms, oregano/thyme, parsley and salt and cook until tender. Remove from heat before it forms a liquid. Let cool then fold in the Fairview Chevin and ¼ cup parmesan cheese. Stuff the mixture into the pasta tubes.

White Sauce

In a melted pot add the butter and heat on medium until melted, add the flour and salt and whisk to combine, slowly add the milk and continue whisking until thickened. Remove from heat. Season with salt and pepper. Add the liquid smoke if using.

Pre-heat oven to 180° C (350 F). Spray a 23×30 cm baking dish with Spray ’n Cook, set aside.


Place ½ a ladle of white sauce on the bottom of the baking dish.
Place the cannelloni tubes in a single layer in the prepared baking dish continue until finished. Pour the pasta sauce over the cannelloni tubes. Spoon the remaining white sauce over the cannelloni and sprinkle with the  grated parmesan. Place a few wild mushrooms on the top. Bake for approximately 20-25 minutes. Let sit 5 minutes before serving. Enjoy!
