Lime Mousse Slices

The lime Mousse Slices are a little addictive. So there, you have been warned.


I like these Easy Lime Mousse slices, because they are not overly sweet and if you plan, you can always have the ingredients in your pantry and freezer to make them. Not sure if that is a good thing though. I have made these with my kids and trust me, if they can make it, so can you.  Of course I will tell you how you can ring the changes with these easy Lime Mousse slices if lemon is not your thing.

makes 16 slices

Ingredients

500 ml cream

1 packet instant vanilla pudding

24o ml milk

2 sheets Woolworths Puff pastry

2 limes

1 cup icing sugar

Method

Preheat oven to 200 C.

Make the mousse first. Empty the content of the instant mousse packet into a bowl. Add the 240 ml milk and the zest of 1 lime and whisk for about 2 min. (hand whisk is ok). Place in the refrigerator to set. Whisk the cream until stiff peak stage and then whisk in the mousse. In the meantime make the pastry slices. Use a ruler to be accurate and precise. Cut each sheet into 4 long strips. Then cut each strip into 6 small strips. Place on a baking sheet, lined with baking paper. Place another sheet of baking paper over the pastry strips and then another baking sheet to weight down the pastry. You do want the pastry strips to rise, yet you want them to be light and buttery.

Bake the pastry strips for about 8-10 minutes or until light golden brown in color. Cool the pastry. You can actually bake and store these in an airtight container until you need them. Make the lime glaze. Mix the icing sugar with some lime juice until you have a thick sticky mix to pour over the cream slices.

To assemble the slices. Place the lime mouse in a piping bag. Use one pastry strip and pipe some mousse in it, then top with another pastry strip. Repeat the process so that you have three layers. Just before serving you pour a little icing glaze over the top.

Cook’s Notes: You can use Instant Chocolate pudding instead of the vanilla and lime zest. For the topping you can use melted chocolate.
