Pecan Cheesecake Squares

These Pecan Cheesecake Squares are quite the buzz on the internet. I just had to try them.

Pecan Cheesecake Squares are not cheap to make, but I got 24 large squares from this recipe and they are incredibly rich. I ti that time of the year when kids have class parties, book clubs and scrapbook clubs have year-end functions and there is always the obligatory plate of eats that must tag along. No problem, I have you covered with a variety of ideas. These Lemon Meringue Squares literally fly off the plate. I have NO resistance to these Raspberry Jam Squares, so I try not to make the too often. If Nutella is your thing, do try these Nutella Squares, kids love them.

Pecan Cheesecake Squares

Pecan Cheesecake Squares

makes 24 squares


For the shortbread layer

375 ml flour

200 ml packed light brown sugar

115 g cold butter – cut in small cubes

125 ml finely chopped pecan nuts

For the Cheesecake Layer

2 x 250 g cream cheese

125 ml condensed milk

5 ml vanilla extract

For the Pecan Pie Layer

200 ml packed light brown sugar

125 ml corn syrup

75 g butter – melted

3 extra large eggs – lightly beaten

2 ml salt

5 ml vanilla extract

375 ml pecan nuts – I given them a rough chop

To make the shortbread layer.

Preheat oven to 180 C/350 F.

Place the flour and sugar in a food processor and start running the machine. While the machine is running, add the butter one block at a time. Stop the machine when you have a breadcrumb consistency. Add the pecan nuts and mix. Line a 20 x 25 cm baking tray with baking paper. Press the shortbread mixture into the pan. Press the mixture evenly into the bottom of the pan. Bake for 10 minutes,  remove from the oven. Cool the shortbread base for 10-15 minutes.

The make the cheesecake layer

Place the cream cheese in a mixing bowl and soften with a spatula. Add the condensed milk and vanilla essence and mix through. Spread the mixture over the shortbread base in the pan and bake for 10 minutes. Allow to cool for 10 minutes.

To make the Pecan Pie layer

Place the butter in a glass bowl and melt it in the microwave for 20 seconds. Add the brown sugar, slat and vanilla and mix well.  Add the eggs and mix. lastly add the pecan nuts and mix. Pour this mixture over the cheesecake mix and bake for 20-25 minutes.

The best way to cut these squares is to chill the baked tray for a few hours. Use a serrated knife, dipped in boiling water to cut 24 even-sized squares.

You can freeze or refrigerate the squares until needed. Make sure the family does not know about these……. they will be gone in a flash.
