Raspberry Ice Cream Sandwiches

Fun to eat Raspberry Ice Cream Sandwiches. The best part is that you can chop and change ingredients to your heart’s content. I am thinking chocolate and hazelnuts, honey and nougat or how about Amarula for the grown-ups?


Raspberry Ice Cream Sandwiches

To make these Raspberry Ice Cream Sandwiches, you literally need 3 ingredients. Wafer biscuits, vanilla ice-cream and of course raspberries. Here are a few important pointers before you start.

1. Make these ice cream sandwiches early in the morning or late at night. In the middle of a scourging hot day, it is not going to work.

2. Find a baking tray or dish that can it a layer of biscuits from side to side – it makes the cutting easier in the end.

3. Soften the ice cream by hand, I find the microwave oven melts it too much.

Ingredients

2 liter good quality vanilla ice cream

2 x  150g Woolworths Vanilla Wafers

100 g fresh raspberries

Method

Line your baking tray or dish with cling wrap with enough plastic hanging over to cover the sandwiches when you are done. Pack a layer of wafers in the bottom tightly against each other. In a large mixing bowl, add the ice cream and with a spatula, soften the ice cream. Spread in a thick layer over the wafer biscuits. work as fast as you can. Press the raspberries into the ice cream. Top with another layer of wafers. Cover up with the plastic and freeze over night. When ready to serve, remove from the baking dish and cut into sandwiches. Serve immediately.
